    What you need
    3 cups all purpose flour plus extra for dusting your work surface
    ½ teaspoon fast rising yeast
    1 teaspoon salt
    1 cup roughly chopped pitted green olives
    1 cup roughly chopped pitted black olives
    1-1/2 cups warm water - not boiling
    1 tablespoon rosemary olive oil
    1 tablespoon dried thyme
    2 tablespoon corn flour
    What you need to do
    You need a large dutch oven or heavy ceramic pot with a lid.
    Mix together warm water and fast rising yeast
    Note: Never use boiling water as it will kill the active yeast
    Note: To keep your active yeast alive and fresh store in the refrigerator
    Combine the flour, salt, olive oil, thyme and both types of olives together in a large bowl
    Add the yeast mixture to the dry ingredients and mix together until the dough starts to come together. It will look and feel sticky. Shape into a ball.
    Cover with plastic wrap and a clean towel or bowl cover and Let it sit until it roughly doubles in size - approx 3 hours
    Place the empty Dutch Oven pot into your oven and preheat to 450F degrees. Approx 30 to 40 mins too heat up.
    Take your dough out of the bowl and lay it on your floured surface..
    Fold the dough over on itself kneading it back into a ball for a second time.
    Lay the dough onto the cornmeal dusted board,
    Place in a clean bowl with parchment paper
    Dust the top of the dough lightly with some extra cornmeal and cover with the plastic wrap and towel again.
    By the time your dutch oven is at temperature, your dough should have risen enough on the second rise
    When oven is ready take off towel and using a sharp serrated knife, cut 2 slits across the top of the dough with a sharp knife.
    Take the hot pot out of the oven using protective mitts with both hands, very carefully lift and gently drop the dough into the pot.
    Place the lid on and put it back into the oven.Remember the pot is very hot! Bake for 30 minutes.
    After 30 minutes, take the lid from the pot and bake for a further 10 minutes and the crust is golden and crispy.
    Let cool before slicing.

    Your video is great and the music too. I’m a home bread baker here in NJ, and baked a small sourdough olive loaf today. My method is similar, but I do an overnight ferment, using 1/4 tsp yeast or sourdough starter. It’s hard adding the olives in the dough, but they say to add them in later during stretch & folds, but they don’t stay in. You added them when mixing and distributed better.

    Excellent written recipe. I cut and pasted to a word document and will read it while cooking. I am relatively new to baking and enjoy this as a hobby since retiring. I find baking a way to express what little artistry I have to present to my friends and family. I look forward to making this for my daughter who bakes Artisan Bread. I find bringing the water temp to 105 - 110F (38 - 43C) works best for proofing the yeast. I have had my most successful Baking experience using the outdoor Natural Gas BBQ. Have you had success using a water pan placed in the oven while baking instead of a Dutch Oven? Loved your UA-cam presentation and all the information provided in "Show More"

    I've been making adaptations of this without olives, sometimes using whole wheat or rye flour. I make it every other day, practically. Not only does it taste better than store bought US bread, there are no chemical preservatives in it.

      I believe we have Spanish set up to convert the description -
      we have converted to Metric but need to test it first but here it is incase you wanted to prepare right away
      360 grams flour
      1 tsp active yeast
      1 tsp salt
      135 grams chopped olives green
      135 grams chopped olives black
      355 ml warm water
      1 tbsp olive oil
      1 tbsp thyme
      2 tbsp corn flour

    Good morning. Looks delicious! I'd like to try it myself, but being from Holland i have a slight problem with the measurements. Could you give me those in grams? (Like: according to some list on the internet 3,5 cups of flour should be prox. 420 g. In your vid it looks to me as you are using much more. Same for the yeast. If you could help me out with "normal" weights would be great...Thanks a lot in advance

      Note 1 cup dry ingredient is different than 1 cup wet :-)

      I’m in the U.S. and many here are converting bread baking to grams. I make this loaf the no knead method. You only need to worry about flour and water to weigh in grams. Salt and small stuff we use spoons. I make this as 400g flour, 300g water which is 75% hydration. You can use less 280g water = 70%, not as sticky.

    Hola otra pregunta si no utilizo fast rising yeast y en lugar solo la levadura que dise active dry yeast. Cuantas cucharadas debo utilizar?

      We only use half a teaspoon of fast rising yeast and you should use half teaspoon dry yeast. Just mix with water to active it before mixing in. That is the only difference I am aware of. I am so excited for you.

      Thank you for watching our video. Any breads with yeast should never go in the fridge, put in a dry area like your cupboard or a bread box. Breads , like Apple 🍎 or Banana 🍌 breads can go in the fridge to keep fresh. 😊

      You can most definitely bake on a cookie sheet, with a pan of water on the rack below the cookie sheet with the dough on it. The shape will be a bit different but the bread will be delicious.

      We use Fleischmann's Quick Rise Instant Yeast. Although I have never used Active Dry yeast, I believe that one needs to be feed, while Instant yeast does not require it.

    Hello. I’m a beginner no-kneed bread maker, so far I’ve made bread twice.
    My family loves it but the only problem is that it only raised about 70% 😢 What am I doing wrong?

      Sorry for my delay in answering you.
      It could be a couple of things: either dough is not in a warm enough area or it is too dry and needs more moisture. What I like to do is cover with plastic wrap and a towel and place in the oven with the light on. This helps with the rise and also helps with rise time. Hope this helps 😀

      @@cookwithus1672 Thank you. I never use our tap water because of its fluoride content. So I buy the purified, drinking water and I have a thermometer I use to test for the temp range as noted on the yeast packet.

    Just remember that bread without a preservative agent doesn’t keep very well and molds quickLy. So eat it up fast fast fast…and pass that butter!!💕

      It’s only 2 of us and I make all the breads. I freeze what we don’t eat the first day. However, I also make sourdough breads, and that stays better than yeast bread.

    That looks so good but that seems like too much work. I don't have a Dutch bowl or a gas stove. I'm sure sticking that in a electric stove would burn it

      Thank you for your comment. This is done in an electric oven and you don’t need a Dutch Oven. You can use a cookie sheet or bread loaf pan. The Dutch Oven creates steam so adding a pan with water on the bottom rack and the loaf on the middle rack will do the same. We hope you try and enjoy it. It is so worth trying.       Thank you for watching and your question - The appeal of the “no-knead” bread baking has minimal effort and produces maximum flavour.:-) By simply mixing up your dough and giving it an extended rising period, you can enjoy gorgeous, golden bread without having to knead. Comparing that to a kneaded dough, you will get a more smooth loaf that will stretch and even bounce back when squeezed. We like the more Rustic No Knead Bread making Approach. You will most definitely Love this recipe!

    Sorry, but instant yeast and all-purpose flour are not exactly "natural". But good enough for most people and certainly better than store-bought.

      The title states Mediterranean Style not actual Mediterranean bread. It is our version of Mediterranean Style Rustic Olive Bread, how we prepare it at home and how we enjoy it.

      @@loredana-oc1yk You should try it. I had Mediterranean bread before, and this one tastes better and takes less than half the time to prepare. My opinion, obviously. Try it.You may like it more than what you are used to. Something different helps to open the mind to new flavours. LOL. Thank again for your comments.

      Hola se ve muy rico. Tengo una duda, generalmente en las recetas para pan. Se dise que el agua debe ser tibia no caliente para mezclar la levadura. De otra manera mata la levadura. Esta receta dises agua caliente. Orientame por favor, gracias.

      @@claudiafonseca5810 Good Day Claudia. Thank you for watching our video and your comment and question 😃We use Hot Tap water, NEVER boiling water as you say. We say HOT because it is a bit hotter than just warm. It is a super wonderful and quick recipe. My husband is from Portugal and has had bread from Spain, Italy and France. He says it is one of the best he has ever tasted. We also use Fleischmann's Quick Rise Instant Yeast to proof our breads. We hope this helps and you give it a try. All the best Claudia.
