Side note: DO NOT USE COCOA TO GREASE THE PANS, the cake will stick, is not the same as flour that creates a crust around the mold when it meets the butter, that is what allows the cake not to stick.
I've used cocoa powder for years. Started doing that when I was very young because I didn't want the chocolate cake to have flour on the outside when I got them out of the pan. Didn't know anybody else did it until I got older! Doesn't stick.
Dry ingredients should have been sifted (either previous to measuring or sifted together) and wet (minus warm water) ingredients should’ve been combined together. Add the warm water first to bloom the cocoa powder, then add the pre mixed wet ingredients. The hot coffee instead of water is a good hack as well.

That's even more than the flour. But, could be because cocoa powders are a little bitter. It's still a lot of sugar imo but I'm not a pro baker so I could be wrong

I just took my muffins out of the oven and they’re amazing! I was skeptical cause I added regular milk instead of buttermilk and with the low oil ratio I thought they would turn out dry, but they’re moist and tasty! Tip: a lot of comments suggest adding coffee instead of water, I did that and tbh I don’t feel it was a good idea. Maybe my coffee wasn’t good enough(Costco’s Folgers) 😢
Instead of water, add brewed coffee! It brings out the chocolate taste.

That's even more than the flour. But, could be because cocoa powders are a little bitter. It's still a lot of sugar imo but I'm not a pro baker so I could be wrong

Ive tried that cocoa powder trick before. WARNING it did not work properly
I just took my muffins out of the oven and they’re amazing! I was skeptical cause I added regular milk instead of buttermilk and with the low oil ratio I thought they would turn out dry, but they’re moist and tasty!
Tip: a lot of comments suggest adding coffee instead of water, I did that and tbh I don’t feel it was a good idea. Maybe my coffee wasn’t good enough(Costco’s Folgers) 😢
