I've never cared much for jalapeños, but I almost think having them raw might be better than cooked slimy or out of a jar. I could see making a snack of the mini bell peppers which are red orange and yellow and surprisingly sweet instead of spicy. Both would probably be better than a green pepper which just seems 'bitter green".

The reason they taste green is that the jalapeños we eat are not mature. They should be red. Chipotle is the taste of the mature ones, they lose the green taste and become sweeter.

I don't know about anywhere else but, here in the American South, it was common growing up in the 90s in some areas among a lot of us black kids to eat pickles with candy. Where I grew up, it was a sour pickle with a jawbreaker. The idea was to experience the contrast between sweet and savory and the hard and soft textural difference between the two. We'd bore a small hole into the pickle and place the candy inside it. You'd lick/suck the pickle to get the sweet and sour flavor until the candy was gone and then eat the pickle.

For Blaithin -- Have you ever had pickled eggs? They're super easy to make. You need a quart or liter jar with a lid. Hard boil a dozen eggs, let them cool, peel them, and put them in the jar. Put a cup of apple cider vinegar, two tablespoons each of salt, sugar and seasonings in a saucepan. If you can get McCormick's roasted garlic and herb seasoning over there, that makes delicious pickled eggs. Otherwise, you can use a tablespoon of minced garlic and a tablespoon of Italian herb mix. You can also add red pepper flakes to taste if you want. Heat the mixture and stir until the sugar and salt are dissolved, then pour it into the jar with the eggs. Put the lid on the jar, shake it gently and put it in the fridge. Now you let them sit for about three days. Give the jar a gentle shake now and then or turn it over. Let me know what you think if you try this!

Jalapeno with a twist: Cheddar poppers. Stuff the jalapeno with cheddar cheese, bread it and fry it. Or, for bonus points, bread it, wrap it in bacon and then fry it.

When I was a kid, I was sick, and the neighbors had made popcorn. And the mother brought me a bowl with lemon juice on it. And I liked it and put lemon juice on my popcorn, by choice, after. So I think I get the pickle juice and popcorn.
But yellow mustard is much better on popcorn. You just take the little mustard packets, open the corner, and dab a little on the popcorn before you put it in your mouth.

To answer, Miss Bláithín's question "Why are pizza jalapeños spicy?" That's because they're normally pickled or in a brine, and while in there, some of the capsaicin from all the peppers gets leeched out of the center of the peppers and reabsorbed into the flesh as it sits.

Others probably have mentioned this, but jalapenos can be duds. The ones with more scarring (white/tan lines, stretch marks, etc) will be spicier, because the capsaicin is its defense mechanism. The more scarring on it, the more defense. You all probably got some very green duds that pretty much do just taste like green peppers.

Jalapeno: all of those looked like they had a smooth shiny rind (outside) ... the heat dfoes come from the seeds and membranes inside, but jalapenos with the dry, brown cracks on the rind are much hotter than the smooth, shiny ones. Just in case you're ever looking to prank someone, make sure you get a smooth ones, and they get the ones with the brown lines/cracks. You're welcome :)

My aunt Mildred used to have raw jalapenos with her meals. I like peanut butter and chopped onions with rice crackers. In Indonesia they make banana ketchup, which you can buy in an Asian market, but sometimes, if you don't read the label, you get ketchup made of banana peppers, and sometimes you get ketchup made with bananas, (plantains?) Somebody needs to introduce Selena Gomez to Li Hing Mui powder It is salty sour sweet, and it won't make her pop corn soggy.
