Glad I found this vid. Last night I got my hands on my first canner which I believe to be an old AA#7. Almost identical as these but has a brass blowoff plug. Old man used it up until last fall so I know it operates as is, but I think I’m going to replace the pressure gauge that’s reading 5psi empty and ditch the petcock for a weight since I’m brand new to canning and he’s no longer around to teach me.

Another indicator of when these canners were made is the excess pressure release plug. On mine it is not rubber but metal and listed as part NO. 75 in the manual.

I have a All American canner that is 81 years old (it was bought the year I was born). It still works. It leaks a small amount so I replaced it this year. Not too much lasts 81 years.
I will keep looking! Btw, thank you for the new hobby of vinegar making😂 on my counter I have grape, mango/basil, apple, and raisin all bubbling away. Also, lime/sage for cleaning. So much fun 😁😁😁

Wow this video is hugely HELPFUL ! I am processing my very first batch of lamb stew in a new to me All American910. I have never used a pressure cooker and you have given me the confidence to proceed. I thought I could just put it on and head out to the garden ! Change of plans I am sticking around to monitor the gauge. Thank you for the valuable tip.... Bragging time. Got this canner in mint condition with box, manual, vaseline etc.... $15 CAD !! at a Garage Sale and yep. Some older couple who went in to a care home together.

Thank you for show that video. i now know what my pressure canner is for sure. I brought my canner in 1975 or 76 for $65 and use it every since that years. well worth the money I spent. book long gone. i don't remember that the book told anything about the grease down the seal

Thank you for this video. I inherited an All American 921 made in March ‘83 the date is in the center of the inside lid and on the bottom of the bottom. It has the petcock device and we just bought a new vent for it to be able to use the weight. I’m hoping to do my first batch of pint jars next week.
That is EXCITING to hear you can replace the steam vent!!! I have been avoiding the older All American style when I see them for sale on Facebook marketplace ect because I am only familiar and comfortable with my newer weight style! Yay :)

This is just what I needed to know, thank you. I found one for sale at a decent price, but apparently it’s one of these older units with the flip valve instead of the weight. Now I know I can still buy it and change out the valve.

What an awesome find. I am always keeping my eyes open for a used All American Canner. I have a different kinds that I picked up from a yard sale. I still haven't used it but am excited and scared to try canning for the first time.
Toni Mitchell give it a try. Haven't I seen you at Alaska Prepper's canning vids? Try just canning water first time. Do it for 10 minutes at 11# pressure. You'll be fine.

Or even if you go right to canning vegetables, you an always freeze whatever does not seal. My first pressure canning job was 14 quarts of beets and every jar sealed. After that I was hooked.

WOW! You got an awesome deal on these! Good on ya! Just a thought, those smaller canners are fabulous for not only your small batch canning, but for canning leftovers! I have a small one, and it sees every bit as much use as my larger ones. The All American parts are easy and economical to get.

I have the AA941 & AA921 and love them! I don't recall the last time I had my common brand named gasket PC out since I've purchased my AAs. Also, good thought about replacing the petcock with updated parts!
And reading the manual, front to back, is wise! I thankfully did that before using my 941 the first time. I was actually nervous! 1:30 in the morning and my load was ready to come out if the canner. The top was vacuum locked on!!! Then I remembered reading about this in the manual. I had forgotten to put a light coat of oil around the seal area. I read again what to do to remove it, took the appropriate steps, and POP! the seal was broken for me to remove the top.

I have several of the old AA canners that I replaced the old petcock on. I prefer the weights and go by the weight instead of the gage because they get banged around a bit and loose accuracy.

You're righ Heidi, keep looking and watching. I've been looking for more than a year and I found one on offer up for $20. So yes, its possible to get amazing deals if you just stay positive and keep looking. Now I'm looking for a grain mill and praying that l find one. God bless you all and keep looking!

Growing up my mother had the slide lock. I couldn't stand tomatoe canning day.. burnt my fingers off. My mother used her canner to make meals always..10 kids I think bulk was neccessary.. Today I have the presto. What a great deal Heidi.. garage sales eh.. very good info thank you!
I found a 930 All American pressure canner at a parts swap meet which was odd but I paid $60 in 2024. I also bought a Mathews Switch back XT compound bow for $200 at the same part swap, the whole day was just weird and not normal at all. I found very little for my 66 or 68 mustangs, was also looked for 55 GMC truck parts and found none that I needed. The day was not a waste of time with these two purchase's.
Mine is just like that and I bought it about 1979. I have to laugh because I didn't think of it as vintage but guess that makes me and the canner vintage. Haha
Yeah, it sounds old but even things made in the 90's now is considered vintage. Vintage is anything that is at least 20 years old or more, antique is anything that is 100 years old or more.
I'd love to see more videos about canning! It's something I've very interested in but there is so little information about it in the UK, and the chances of finding a second hand canner are slim to none I think!
I have heard that finding canning supplies there, even jars, second hand is very difficult. I wonder if it is because less people can there or that the same or more can and are not willing to let go of what they have.

Interested in seeing more videos about this and upgrades you might do. I found a good deal on a used All American pressure canner that looks just like these in your video. I've never done any pressure canning but plan to learn.
I did get the parts in so hopefully I will be able to shoot that video later this week on changing out the parts
I have the largest one with the the bend over vent, been having it many years also have the smaller one newer one also. I have never had any problems at all, wouldn’t use any other kind.

OK you did add to my knowledge a bit but I think we’re missing something. That petcock valve has a ring with holes in it. With the petcock valve closed you can slightly open that ring by loosening it allowing steam out to regulate your psi level required. A very small touch of it will change your psi. What I guess I missed was turning down the heat while it’s fully closed and then micro adjusting the ring with just letting that valve open a little bit to regulate the pressure( fine-tuning).
I’d be grateful for any feedback. As I am trying to figure out that toggle system as well. Although I’m about to get online and order some parts and switch it over to the new method. Too aggravating

I want to say i trust your judgment 100%.With that being said,what can i do with rest of my green tomato in garden?Would appreciate some links for this.I use my mothers All american canner that i use to help her can on and im 70 yrs old.Love that canner.Also i have some151 proof grain alchole ive had for yrs,is it possible to add water to it to make tinctures or just stick to vodka.
Sandy Mick it's still like vodka. Try a small amount to test it & see if it works out. Then you'll know.
Yes, you can use the 151 as is, it is for tincturing, many do, it is just not my personal preference. As far as the green tomatoes, I have fermented them, made fried green tomatoes, cut and sauteed them with other veggies but my favorite thing I have made was green tomato relish. I love my All American Standard Canner but also paid full price for it. I initially couldn't get it to seal properly and contacted the company. They sent me a new lid and everything worked great. I have never seen one used but I will now keep my eyes open. One question I have is every couple of batches I do, I have one or two jars that don't seal and I'd like to know the common reasons for jars not sealing and how to prevent that. Thanks.
I paid full price for my original All American and it was worth every penny.
It depends on the lids you are using: Tattler (or other reusable plastic lids) or the standard metal lids. The way you tighten the bands on either of these is different and that can play a part in how well they seal. Any imperfections on the jar rim or lid can also cause problems. Over filling the jars is another, this is one I tend to do from time to time.

Be sure to use correct head space. Avoid cheap jars. My mother will not use Golden Harvest. She'll can in an old pickle jar with an old lid or anything that was canned when she bought it. She re uses canning lids on a regular basis. I'm 50 and she has always done this. Mamaw did too. In fact, I've got a jar of pears preserves she canned when Carter was president. Im putting that on some toast very soon.

I see you have already seen the update so no, I never did use either canner with the petcock. The larger one was already gifted to my one daughter in law and I will likely give the smaller one to my other daughter in law.
Hello, I have a All American canner from my parents that have passed years ago. The canner must be 50's or 60's vintige and sat in storage for 20 years. Now retired I have expanded my garden and started canning. Until this year I water bathed using on line recipes. I dug out the canner to replace the old porcelain pot she used due to it rusted a pin hole for a water bath boiler and researched it a bit and came across your you tube video. There isn't a manual so I am hesitant to use it as a canner but your video has helped me understand it better. Any advice on finding a manual? Thank you.
Whenever I need a manual I simply type into my browser the item name, model number and the word manual. I sometimes will put in Free PDF and often times I can find one of what I am looking for without having to buy it. Otherwise eBay has places that sell manuals in digital format
The weight is the way to go. The gauge can be off and you don't know it. The weight is governed by physics and is a very accurate device and can't be wrong.
I do, I do !! I want to learn, I have done water bath, but never have done pressure canning. I have a presto canner, and I have to do it outside, because of having a glass stovetop, which I hate anyway.. but that's another story..
Buy a good single burner hotplate for canning. I used to use propane camp stove outside, but was very inconvenient. A heavy duty single burner hotplate saved the day.
What is the difference between an Induction pressure canner and a regular canner. I put out a requesting to buy ad on our local site. It is too early for garage sales where I live. Thank you for any help or direction.

ONE DOLLAR?!?! Wow! Either people just do not realize the value of what they have or they are simply trying to move things - which I can understand that too. Please, please, please show how you change the petcock out to a weighted system. There is a very used older petcock model (the size of the larger one you want to give to your daughter-in-law) on Craigslist for $80 that I am thinking of getting. If the All American canner people said it was ok to change it to a weighted system, I want to get this. I also want any canning videos/recipes you want to share. Blessings!
My really old All American pressure cooker doesn’t have a pressure plug. I am not sure if that really matters or not. I ordered the new valve, regulator, and dial gauge to update it. How would you feel about using a cooker/canner that doesn’t have an emergency release?
That is a good question and while it is a nice safety feature, I have yet to ever need it. As long as people are paying attention to their canners, like they should be doing anyway, it should not be an issue.
@@RainCountryHomestead I agree. I am never more than ten feet away from my canner when its under pressure. In reading the instruction manual that came with the canner I learned that the petcock installed on it is designed to break apart if the canner makes it to 20 pounds. I will have to be super vigilant as the valve and regulator I am replacing it with will be the only fail safe on it.

I have one with a petcock if that’s what you’re saying. But my pressure relief valve that little rubber piece.. mine is brass or some type of metal with a hole in it, but not a hole you can see through. Do you think I can buy that rubber piece and replace the metal piece? I did buy the vent and weight when I was handed down this canner.
I am not sure if the rubber piece would fit or not. You would have to call or email All American and see if they can tell you that

Yes, it is safe. It is just the best metal to use for a canner. It is not getting into the food

Question. I have two of those. One of them, the rubber valve leaks and the pressure never builds. Can you help me figure out what's wrong?
If it is leaking around the rubber pressure release then you may need to replace that part.

I have two older canners, my pep clocks don't look like yours. And I have metal overpressure valves. One lid does not have the overpressure.
Yes, All American Canners have changed a lot through the years. These ones were not quite as old as I had originally thought but Patrick did get the petcocks changed out for the weights.
Hey Heidi thanks for another nicely informative video. I've been looking for a quality canner like that I live 5 minutes away from your favorite store Coastal. I could meet you there on short notice, because I work nights - I would pay $75 cash for the smaller one unrepaired - or $90 if you want to repair it first on one of your videos. (Or)
I would give $100 cash for the bigger one. No rush - "whenever it's convenient for you" - if you want to do the deal.

I did get the parts in yesterday and plan on doing a video on it. The bigger one is going to my daughter in law but let me think about that smaller one. No that's a newer old one super late 80's or early 90 cuz mine has that old valve but yours has a few more newer features then mine from 60/70's

I do all my canning on propane but an open fire is harder to control the heat on. It can be done but it would be much more difficult to kep the heat consistent and correct

I do not remember what numbers are what but if you look them up, they will tell you how many jars they hold
How do you know that 10lbs of pressure is right for your area? Where do I look that up? How do I figure that out?
You need to find out what your elevation or altitude is, simply put in your town/state in your browser and add the word "elevation" or "altitude". Then you look in your pressure canner book and see what weight you need. Most people will need 10 or 15. www.healthycanning.com/altitude-adjustments-for-pressure-canning/
New Orleans needs 5, below sea level. 1000' and below needs 10 Lbs. Over 1000' needs 15 Lbs. So, just put your town in a search, altitude is listed along with zip code and population.

@@RainCountryHomestead we had the heat low as we could get it and it build up like 16 ibs of pressure.It’s a old 21.5 quart all American without the regulator valve or jiggler.Could it be the gauge or because it has no where to release any amount of pressure.
Ah, yes, I would wonder if it is the gauge. Do you have a weighted set up instead of the petcock? If so, I would go by the weight instead, it is the best indicator anyway

Heidi, this is a long shot and maybe a dumb question but if you or one of you wise ladies or men in the comments can help, I’d appreciate it. I recently got a used all American pressure canner (from a box of misc stuff someone got at a sale) and it looks like one you got in a video a while back with the flip pepcoc? Pressure thing instead of the weight. But I was doing more research and saw one that looked like it online and it said it was a sterilizer not a pressure canner. How can I know?
