When I was looking how to cook the gai lan I bought, it was all variations of steam/stirfry with oyster sauce, and I was getting a bit tired from it. I am really excited to try your pesto, it looks really yummy and very different from the typical gai lan dish

The confit garlic will last up to 2 weeks in the oil in your fridge. But mine only lasts a couple days LOL It's epic on toast!

I make something like this with spinach, but it also has some red pepper flakes. Would red pepper flakes go with the Morning Glory greens? Also, do any Morning Glory greens work. Can I just harvest the ones from my yard?

A google search for pak boong doesn't show any places in Australia to buy from, except for seeds 😑 There may be some in Asian stores, don't know off hand.
I've found it most Asian grocery stories in Australia that have fresh vegetables. It doesn't ship well, so they probably don't list it for sale online. But seriously, any fresh Asian supermarket will have it :-) It's commonly called kang kong in Chinese stores.
