Sweet Purple Potato Milk Buns | Fluffy Milk Bread

  • Fresh Sweet purple potato is a great friend to the Hokkaido milk buns. I have been making them for my little boy. The meat of the sweet purple potatoes makes the bread Fluffy and moist. Semi sweet bread.
    Ingredients:
    2 cup bread flour / all purpose flour
    1tsp + 1/4tsp active dry yeast
    3/4tsp salt
    4tbsp granulated sugar
    200g-210g sweet purple yam(potato)
    2tbsp unsalted butter
    1 egg
    100gram whole milk (close to 1/2 cup)
    1/4tsp ube extract (optional) - it helps maintain the rich purple color
    Egg wash
    Roasted sesames seeds (optional)
    Baking pan, 9'x11'

    Interesting recipe, the bread is so fluffy and its purple color makes it so unique, I will try this,

      The purple came from the ube extract which enhance the color of the purple yam. Fresh purple yam color tend to die down after baked.
      If I may suggest, the following recipe doesn't require the extract. Another one of my favorite if you like almond. :0)

      Ube extract (purple yam flavor) its optional. I found it helps with maintaining the ube color.

    Hi Jennie, is there a typo for the whole milk? It calls for 100gr of whole milk in recipe but in the video you have it up to almost 200gr in the measure cup.

      Hello Niki, it is 100gram whole milk. The measurement cup is ml and cup. Not gram.
      100g is close to 1/2cup

    I don’t have sweet potato yam, can I replace with purple sweet potato flour? If yes, how many gram I need to put? Thanks

      Hello Josephine,
      That's a very good question. Unfortunately, I have not get a chance to experiment this recipe with the sweet purple flour.
      I would recommend this though:
      Since the fresh purple yam help with the moisture and softness of the bread, you will need to make the flour paste to substitute.
      Flour Paste: 20g bread flour + 100g water. Cook it until it became thick like a paste. I included a link to show you how to make the paste.
      Rest it in the refrigerator for at least 4-5 hours or overnight. Room temp before using.
      use 1/4cup of the sweet potato flour. Add it when you add all the dry ingredients.
      I do recommend to use the ube extract to enhance the flavor/fragrance and bring out the color. If you don't have it, not to worry. The buns will still be yummy.

      No, because we have the fresh sweet potato to help with the moister already. :0)

      haha. Typo. Been baking hokkaido milk bread that week. lolz. I didn't use tangzhong (flour paste) in this recipe.
