Looks really smashing, with lovely presentation of the clams sitting among the speckled herbs and chilli. I make this too from time to time (with the noodles seperate) it's a great treat. *Only significant thing, is I'd have doubled the number of clams at least because - I dunno, I love them lol.
Helene Wein about 10 minutes on super low heat. I personally cook mine covered for about 5-6 minutes on medium heat. Then remove the clams as they open to another dish. If the clams don’t open after 10 minutes that means they are bad and you should just discard those.
this is exactly how I make it, except I do put a can of canned clams in as well. in as well for more clam flavor. My mouth is watering. I have to have company over to make this dish. YUM!!!

I love cooking many different cuisines, but Italian and French are my favorite. I think my love for good food was instilled by the neighbors next door, they were from Italy and were always feeding me, they had what they liked to call a "pizza place" near the loop in Chicago, but it was in fact a very nice Italian restaurant. I've been cooking Italian for so long, that I buy olive oil by the 3 liter tin. I make mussels much the same way, sometime I might add a little homemade fish stock.
