How to Make Ceviche -- Mexican Ceviche Recipe

  • Hey Chile-Heads! Today I'll be teaching you my recipe for Ceviche. Ceviche is a fresh, light dish starring fish, lime juice, and lots of delicious vegetables as well. This dish is perfect for snacking with some tortilla chips, avocados, and a Corona on the side. Enjoy!

    Ceviche
    Ingredients:
    1 lb dover sole, or tilapia cut in ½ inch dice
    1 cup of fresh squeezed lime juice
    2-3 jalapeños, deseeded and finely diced
    1-2 carrots very finely diced
    1 small onion finely diced
    2 roma tomatoes, deseeded and finely diced
    1 cup cilantro, chopped
    Directions:
    Chop 1 lb fish into ½ inch dice and put into a glass or stainless steel bowl. Add 1 cup lime juice, cover with saran wrap and place in the refrigerator for at least one hour for medium rare, 2 hours for medium, or 4 hours for well done fish. Dice 2-3 jalapeños, 1-2 carrots, 1 small onion, 2 roma tomatoes and 1 cup cilantro while you are waiting for the fish to “cook” in the citrus juice. Once the fish is cooked, drain all the liquid. Next you’ll add the veggies and stir everything to combine. Let it sit for about 10-15 minutes to bring all the flavors together. Serve with diced avocado, more lime and tortilla chips. Enjoy!

    Could you tell me what cooks in that lime juice in the refrigerator with no heat

      Yeah, it’s really an interesting concept, but the citrus acids actually cause the proteins to “cook” in very much the same way as heat. It kinda cool.

      That’s so funny. My family has never used shrimp in ceviche and when I ordered it a restaurant I was shook. Shrimp is for Shrimp Cocktail. I looked it up and apparently it’s very common. I’m still a Fish > Shrimp Ceviche lover.

    When you say "cook" do you mean on the fire?

      Hello Lydia! I know it is a little confusing, but when I say "cook," I mean that by putting it in the lime juice for a certain amount of time (depending on how you like it - medium/medium rare, etc.) it "cooks" so that it is no longer raw. It's an amazing process. I hope you try it out and let me know what you think.

      Yes, you can definitely use shrimp, it just doesn’t need as long to cook.

      Some people confuse Mexican shrimp cocktail with ceviche.
