Creamy Green Chile Chicken Soup Recipe – How to Make Green Chile Chicken Soup
🌶️ Hey Chile-Heads! Today I’m sharing my newest recipe: Creamy Green Chile Chicken Soup. It has rained so often this summer in Albuquerque, and nothing comforts me more in rainy weather than some delicious soup. This creamy soup combines hearty potatoes, chicken, and spicy New Mexico green chile to make a wonderful comfort meal. This meal comes together so quickly; you can easily whip it up on a weeknight after work. I hope you make this creamy green chile chicken recipe and love it as much as I do!

🔸 Ingredients:
1 large russet potato, diced
2 chicken breasts, diced (you could use a rotisserie)
2 tbsp vegetable oil
2 tbsp flour
1 clove of garlic pressed
4 cups chicken broth
1 cup New Mexico chopped green chile
½ cup heavy cream or half and half
🔸 Instructions:
Peel 1 large russet potato and dice into ¼ inch pieces and set aside. Next, slice 2 chicken breasts into ¼ inch dice and set aside. Heat 2 tbsp oil in a large pot on medium high heat. Now add the chicken to the pot and cook for about 5 minutes. Then add the diced potatoes; stir and cook for one minute. Next we will add 2 tbsp of flour and cook for another minute. Next you will add 1 clove of pressed garlic and cook until it becomes fragrant. Next, add 4 cups of broth and 1 cup of New Mexico chopped green chile; bring it up to a boil. Once boiling, add ½ cup of heavy cream (or half and half) and stir to combine. Now that it has thickened slightly, cover and turn the heat down to low. Let it cook for 20 - 30 minutes, or until the potatoes are cooked.
Make it vegan/vegetarian: replace the chicken with jackfruit, and the chicken broth with vegetable broth.
Make it gluten free: omit the flour and add a cornstarch swirlie (2 tablespoons cornstarch/6 tablespoons water) when it is boiling and until thickened.

      Always use wood or nylon utensils. Seasoning is very important to cast iron. Metal utensils will scrape the seasoning off.

    I use 80/20 hamburger, I add fresh chopped garlic and onion to the hamburger as it browns till the onion looks clear or opaque in color. Then I use the drippings or grease from frying the hamburger to brown the flour. I drain it to one side of the pan, separate from the hamburger. I add flour to the grease till it makes a "glue-like" or paste texture and "toast" the flour in the hamburger drippings , leaving the flour side of the pan on medium-high heat stirring the mixture constantly till it has a deep brown color, careful to not burn the paste! It gives the Caldo it's flavor! Lower the heat an add red Chile powder (Hernandez prepared Chile mix) n add potatoes n broth cook all together till potatoes are soft, don't overcook! Serve with warm tortillas ❤

      @@RedorGreen it honestly exceeded expectations. Thanks for the idea. I did an ear of corn/onion/7 poblanos/6 cayenne/2 jalapeno. Roasted in the oven till blistered. Rough chopped and added in at the roux stage. It is my second favorite soup I have ever tried. I will make it a ton for sure.

    When making Mexican rice at the point where you cover it I always laid a jalapeno pepper on top. It would infuse the rice with that flavor with none of the heat. It also tasted most like restaurant rice. Should work with this.

    Have you ever tried making the roux first? Potatoes have starch that will thicken a stew or soup. I totally dig your recipe, I'm just curious if you tried that. Also cornstarch at the end? I'm far from a master of roux, but my friend is Cajun and I think he would use a blonde roux for this.
