- This Ceviche recipe is a light and fresh appetizer (or main meal) that's vibrant, tangy, and perfectly scoopable with tortilla chips.
Learn how to make ceviche! This ceviche de pescado (fish ceviche) is my go-to ceviche recipe for summertime parties and fiestas. It also highlights what I love about Mexican coastal food, where a handful of fresh, healthy ingredients turn into one amazingly flavorful meal. I'm using white fish today, though shrimp can also be used.
I've eaten endless amounts of ceviche across Mexico, so I'm excited to share my take on this classic ceviche. It's naturally simple yet touches on all the fresh flavors of Mexico. Side note - I need to visit Peru to make a classic Peruvian ceviche next!

I’m from Peru and when I heard ceviche I was so excited, but the Mexican ceviche does look so different and at the same time so delicious!!!
I subscribed to Downshiftology channel, thinking it was all about cars and gear-shifting. Little did I know, it was actually about food! But I decided to stick around and watch all your videos anyway. Turns out, it was a fantastic decision! Now, not only am I a pro at shifting gears, but I've also mastered the art of shifting flavors in the kitchen. Who knew a channel could satisfy both my need for speed and my need for a good meal? Our family traditionally eats ceviche on a tostada or sometimes out of a bowl with salty crackers, thank you for sharing this. Definitely will try it with the avocado diced in it.

@@Downshiftology yes , hopefully you can try all the variations of the ceviche, although its origin comes from Asia , due the lemon is from Asia ... Before Spanish people took the lemon from Asia to America, some Asian countries had dishes like the ceviche, for example in Philippines, they have a dish called "Kinilaw".

I work at a Mexican restaurant and the best way to eat ceviche safely is by marinade the fish in lemon juice over night.
So minimum 10 hours for extra safety.

Hello @@sambulate. In Peru, we also prepare ceviche by marinating the fish in lime juice (not lemon). However, we enhance the flavor of the fish by seasoning it with a Peruvian yellow hot pepper called aji amarillo and adding other spices such as salt and pepper. We then mix it with red onion. We do not include cucumbers or tomatoes in our ceviche. Instead, we serve it with Peruvian corn, sweet potato, lettuce, and toasted corn.

I love ceviche and add red chili sauce for the kick! I also love swai fish which is predominantly used for Peruvian ceviche. They also add some kind of cream or dairy which gives a milky color. Thanks for motivating me to make this for the weekend!!! Yummmm 🔥🔥🔥

Hello, the original word ceviche is for a Peruvian dish where small pieces of raw fish are cooked with a lemon from the area that is extremely acidic and has a good flavor, which with salt and other ingredients achieves a perfect and difficult mixture find. Currently many Latin countries have released their own version of "ceviche" (Chile, Ecuador, Colombia and Mexico among others) for tourist interests. Its origins date back to 1800 and it was created by Peruvian poor fishermen who inherited the tradition of eating raw fish with lemon and chili pepper on the high seas. It was a dish for the poor and for the poor until almost 1990 when it became a flagship dish. Greetings

@@j.g.007there is a similar sounding dish in Spain called escabeche the fish is fried and covered in a sauce of salt vinegar sugar and pickled vegetables.
Japan also has a similar dish called nanbanzuki
@tylerhughes5420 Hi, oh wow, great info 🤗 that sounds amazing! Puerto Rican and Dominican cuisine also has escabeche. I love it! And it's similar to escovitch fish from Jamaica. Which is usually fried snapper or other fish with thin sliced spicy pickled onion, peppers, and carrot. So good. I love Japanese cuisine, too! 🙂

I make ceviche in Mexico all the time from fish fresh the ocean. I add sliced black olives, olive oil (just a tablespoon), some dried oregano. Sometimes I even add a tablespoon of honey. I always marinade lemon and lime juice in fish for at least 12-24 hours. I have found worms in the near the gills part of the halibut, so I don't use that part.
Next country suggestion: somewhere in Asia - a downshiftology twist on asian cuisine sounds wonderful!

Ceviche is best made with freshly caught fish or sushi-grade, depending on the variety.

Looks delish! Question: I noticed the fish wasn’t completely covered in the bowl. Is that important to do? My brain feels like the parts poking out wont cook.
You can stir it a few times to make sure all the pieces get "cooked." :)

You could always add half of a jalapeno pepper, or dice up a bit of sweet bell pepper if you'd still like that pop of green.
You need an electric juicer! I make Puerto Rican style ceviche which has less ingredience but like you say, it's all good. What part of Cabo do you like? Want to go soon (have to drive with my dog so thinking of entering from San Diego (extra 5 hours from PHX and staying along the coast). Thanks! PS, I bought that Zwilling knife and love it!

This looks so delicious and I mentioned it to my mother and she was turned off when I said it was "cooked" in lime juice. She felt it could not be eaten unless the fish was cooked with heat. I will try it anyways for myself. I will have to see if Northern fish would work. Someone gave me some that was caught in Canada.
You can definitely Google it for more info. But raw fish (aka sushi) is delish too! There's lots of ways to enjoy fish. :)

The acidity does not cook the fish. It denatures the proteins making it seem as if it is cooked. But the fish is still raw.
Out of curiosity, is this marinated fish “cooked” enough to eat when you are pregnant? Probably not or?
