I usually just buy a pound or 2 of limes, and just use what I need. Condiments: Tostada shells crackers avocado hot sauce

Ceviche mexicano can mean almost anything nowadays. Every state has taken the dish and made it their own , for example in Acapulco they add refresco Fanta(yeah, wtf?) I grew up with the estilo Nayarit… shredded carrot and top off the tostada with salsa huichol. I like your version Peace ☮️
I make mine the same way but I leave in the "Leche de tigre". I want it running off my chips or tostada. Sipping the juice is the best part imo. That looks great and now I have to make some. Lol

( he never would give up the recipe ) I do have a question though is there a reason that some people recommend waiting 24 hours and also change the lime juice out As far as safety is concerned ?
Maybe not comfortable working with raw fish and not cooking it. The acid from limes and lemons cook the fish or shrimp. Even in marinades I put in beef and chicken, you can see the acidity changing the color of the meat looking likes its being cooked when sitting for so long. From family and friends, after letting it steep in the lime/lemon juice, we remove some of the juice because the juice is really sour and can become overpowering.

you can make it ahead of time. Just keep it cold
