This seems like a great recipe for someone like me with Irritable bowel disease. As long as your intestines can tolerate it (some people respond differently), fish is a great and easily absorbed source of protein. Bone broths too are great sources of collagen and protein to help heal your gut. I want to try this soon.

just fyi once you've extracted all the flavour that you want from the bones/carcass , instead of throwing all of that away i put it into another pot with just enough water to cover it and simmer it on low heat for another 12+ hrs or until the bones are soft enough to break with your fingers [im usually doing this with chicken carcasses, so less time for fish obvs] , then i will puree it with a stick blender in the pot and portion into containers that i keep in the freezer , usually i thaw these out and use it to supplement my dogs food , but its also a healthy/good filler for thicker stews/beans/curries/etc

Salmon bone soup is in my LCHF menu, since it is cheap.
I make it twice a week.
I do not strain them, I consume all the scrap meat, fats & chew to juice out the bones & head.... yummy.
Either in Tomyam base or oyster sauce base in my Instant Pot.

Hey Jon, love your content - been following your videos for many years now and come back to certain ones every now and then. This is one of them! I love how sustainable a way of cooking this is. Have you ever tried this with other fish, e.g. seabass? I was looking at different fish trimmings on offer and noticed seabass was listed at a slightly lower price so wanted to see if you have experience with that.

try putting some tamarind or sinigang soup mix from the asian store... its a common filipino dish and the tamarind adds that little savory citrus finish that makes it refreshing yet comforting at the same time.

I think a good figh for soups are golden theadfin breams. They have a sweet umami flavor like mix between squid and crab. It's a bit expensive when i was a kid. Now 15 years later it's very expensive. It's best for soup, adobo or even better make adobo then the next day fry the fish.
