The BEST Lamb Rogan Josh

  • This is the ultimate in Rogan Josh recipes, and it is so simple to make! It features a very special ingredient, Ratan Jot, which gives the curry a glorious red tinge. But don't fret, if you can't find it, feel free to leave it out and it will taste just as good :)
    Perfect served with hot Basmati Rice and/or Rotis and Naan!

    INGREDIENTS
    1.5 lb, cubed Lamb
    1 tsp, Garam Masala
    1 tsp, ground Fennel
    1 tbsp and 1 tsp, Kashmiri Red Chilli Powder
    1 tbsp and 1 tsp, grated Ginger
    1 tbsp and 1 tsp, grated Garlic
    2 and 1/4 cup, Plain Yogurt
    1/2 cup, Canola Oil
    3 inches, Ratan Jot (Alkanet Root) broken into pieces
    1 tsp, Fennel Seed
    1 tsp, Black Pepper Corns
    3, Black Cardamom
    6, Green Cardamom
    6, Cloves
    1 Cinnamon Stick
    1 large Onion, thinly sliced
    3 cups, Water
    Salt to Taste
    METHOD
    In a bowl, combine Lamb, Garam Masala, ground Fennel, 1 tsp Kashmiri Chilli Powder, 1 tsp Ginger, 1 tsp, Garlic, 1 tsp Salt, and 1/4 cup Yogurt. Stir to combine. Cover and refrigerate for 30 minutes to 24 hours to marinate.
    Place Rattan Jot in a heat proof bowl. Heat 1/4 cup Canola Oil and pour over Rattan Jot. Allow to steep to release red colour.
    Heat a heavy bottomed large pot with 1/8 cup of Canola Oil on high heat. When oil is hot, add Lamb and cook for 15-20 minutes until browned on all sides. Transfer to a bowl and set aside.
    In the same pot on medium-high heat, add the remaining 1/8 cup of Canola Oil and allow to heat up. Then add Fennel Seeds, Black Peppercorns, Black Cardamom, Green Cardamom and Cloves. Toast for 15-20 seconds, or until Cloves puff up.
    Immediately add the Onions, and cook for 10 minutes until softened and browned. Then add the remaining Ginger and Garlic and cook for 1 minute.
    Return reserved Lamb and any juices that may have accumulated in the bowl, back to the pot along with 2 cups of Yogurt. Stir well to combine. Then add Water, 1 tbsp Kashmiri Chilli Powder, and Salt to Taste. Strain the Rattan Jot oil, and transfer only the coloured oil to the curry.
    Cook partially covered on medium-low heat for 1.5 hours or until Lamb is tender, and sauce has thickened. Taste for seasoning and add more salt if necessary. Enjoy! :)

    I’ve made this several times now. I ordered the ratan jot online as it’s hard to find in Ireland but I’m so glad I did- what an incredible colour. It is so beautiful. Such an excellent dish. Thank you

    Made this for the first time after bookmarking it months ago, and it turned out amazing. I used less lamb (so expensive!) and less water, and I used homemade garlic/ginger paste rather than chopped ginger and garlic. I went out to a place that makes the real deal before trying to make it myself, and I am very happy with the results. Only thing I need to remember in the future - scoop out the black cardamom pods before serving!

    This is the first time I've heard of Rattan Jot and I've been in lots of East Indian markets in Canada. I've never seen it included in a recipe before. I'll try making the dish without it.

    I got a box of Shan Roman Gosh Curry Mix. For a kilo of meat [I used beef short ribs] they had me add 1 medium diced tomato and a half diced onion. 2 1/2 cups yogurt. 1 to 1 1/2 cups butter or ghee or oil. All added to skillet at various times. Into the slow cooker until falling from bones. Next morning I added a cup of milk as I reheated. Very tasty with rice. Shanfoods is from Pakistan. Perhaps there is a Kashmiri prejudice against onions and tomatoes.
    Another recipe on the box called Kashmiri stew starts with a half cup of ghee or butter, fry a cup each small potatoes and onions, meat and spice mix for a while, add five or six glasses of water, , boil on low until tender, add milk or cream and simmer a bit. Serve on toast, buns, or sheermal.
    I’ve seen the jars of rogan josh. Have to try some. I’ve grown fond of Indian food. There are a couple of restaurants in 5own.

    Hi, tried this yesterday, will definitely make again. I have fussy teenagers and they agree with tis recipe, didn't mind the onion even other said is not authentic. Next is your butter chicken.

    OH I LOVE ROGAN GOSH.. THE KING OF CURRIES . IVE NEVER SEE RATAN JOT BEFORE. IT DOES GIVE A BEAUTIFUL COLOUR TO THE CURRY AND ITS NATURAL TOO SO YOUR NOT STUFFING YOUR FAMILY FULL OF CHEMICALS.     Question- If you wanted to spice this up, what would you do with regard to the Kashmiri chili? Add another chili on top of it? Replace the Kashmiri chili with something else? Which chili would you use? Thank you! Can't wait to make this.

    Dear Vijaya, I am from Kashmir, born and brought up. This is not even close to what my mom cooks like and she cooks very traditional kashmiri cuisines. They use kashmiri chili for bringing up the red bright color. However, I would still be interested to taste this version.

    I think it's missing Asafoetida or 'hing' powder to take it to another level or make it truly authentic. I've tried it with and without asafoetida and I'd have to say that it tastes much better with it in. It brings out more flavour of the Rogan Josh in my opinion

    I am an artist and fascinated by the addition of Rotan Jot. The color looks glorious. I was only able to find Alkanet Powder, not the whole root and would like to know how much ...a tsp. , a Tbsp, to add to the hot oil? Thank you, I look forward to a response.

    Original Kashmere rogan josh has no fresh ginger or garlic and tomatoes but dried ginger and asafetida.

      If I am not wrong then no onion either. fennel and asafoetida does the job of flavoring the meat.

      Farhana if you mean "Garam" masala then yes garam masala goes in, even maze and nutmeg powder. though if not available you may have to do with what ever is available.

      Wilson David Well looks well nice why don't you put a bid up of your version she done good job and as she said Rogan means hot oil so surley it will change a bit depending on family and area I only just found out about a veg my mates mum puts in Jamaican curry goat and no one else does that but tastes wicked and authentic. I think people keep secrets too

    In your Rohan Josh you use pieces of Ratan Jot, heated in oil. I have the powder, how would I use it in your recipe. The same way: add heated oil to the powder.     Ive an idea💡, same recipe but instead of yoghurt add buttermilk, and instead of garam masala use kashmir masala- and instead of red oil trick use cream and kashmiri saffron.

    Loved the Video ! I bought the already made sauce at walmart today for lunch because I was at work . tonight I wanted to find out ABOUT the sauce because it was so Delicious. I added zuchinni squash and halved grape tomatoes to sauce and served over Basmati rice. I Loved the Flavor ! Now I want to make it with lamb like in Your video ! Thank You !
