  • Rogan Josh or Kashmiri Rogan Josh is a world popular dish from the Kashmeer region of India. Traditionally made with mutton. But you can cook rogan josh with lamb or chicken. This is the authentic Rogan Josh recipe and is cooked with lamb.
    Ingredients
    500g lamb with or without bones cleaned and cut into bite-sized pieces
    250g sliced onions
    5 bay leaves
    10 green cardamon
    6-7 black cardamon
    10 cloves
    4'' cinnamon
    2 mace
    2tbsp ginger and garlic paste
    200g tomatoes (pureed)
    1tbsp fennel powder
    1/2tbsp mano powder
    1 tbsp coriander powder
    2tbsp plain yoghurt
    50g fried onion paste
    1tbsp fennel seeds
    2tbsp vegetable oil
    1tsp fennel seed powder
    2tsp garam masala
    1tsp cinnamon powder
    hot water as required
    salt as required
    fresh ginger for garnish
    coriander sprig for garnish

    Don't get me wrong because it looks delicious, but this is not traditional Kashmiri at all. There are tomatoes onions and garlic instead of saffron yoghurt and asafoetida. Also the mango powder is not supposed to be in there. Coloring is done with Ratanjot or Cockscomb flower. This is closer to the BIR version I think.

    Kia Ora from New Zealand Chef Ajay. A pretty damn good looking recipe, and pretty easy to make. Have you ever used Ratan Jot as a colouring agent? I have some, and I am yet to try it, but apparently it goes well in Rogan Josh to give a nice rich red colour. I had to get mine from The Punjab by post! I can't wait to give this recipe a try. I might use Lamb foreshanks as the meat. Cheers Chef!

    Looks great. I was wondering, firstly, how many people this recipe will serve? Also, how many tablespoons of mustard oil you'd recommend.

      500g lamb meat is enough for 3 people. 4 to 5 tbsp mustard oil. Let me know if you have any questions.

    So I’m not sure what I did wrong. It looked great but was bitter and felt grainy. Nothing was burnt so I’m at a loss.

      I buy mustard oil from Asian grossery shop.
      Fry thinly sliced onins until they are light brown and not dark. Then mix bit little bit of water and blitz in a blender until smooth.

      @@ChefAjayKumar Onion paste known as Banjarra or Bunjarra takes curries to the next level, you should do a vid on making it, you can store it in the freezer by using ice cube trays like you can with home made ginger and garlic paste. Nice videos though Ajay.

      I do not recommend making a mustard oil as it is going to be too strong and little bit unhealthy. Edible mustard oil is easily available on amazon. Please see my lamb korma video to learn on how to make fried onion. It is worth.
