    I will say this, as a Latino, we tend to use beans a lot, but also some types of meats can benefit from this - using a pressure cooker (even the stove top ones) can really help down the line, as your cooking time is MUCH lower, which means either less natural gas or less electricity used.
    Also - one of the things we do when we make beans in Brazil, if you take some of the cooked beans and mash them up, or whizz them up and add that paste back in, it will really help thicken the soup, and give that creamy texture.

      I use bit of refried beans leftover to thick my soup. Scraping the can then washing it out for soup lets the can make one more meal better and clean the can for recycling.

    That part about removing the bones/cartilage really hits home. I bought some supposedly "boneless" chicken breasts from Kroger years back. I ended up with a lifelong scar on my tongue because somebody missed an extremely sharp triangular bone in there. I was 25. Im 44 and to this day dissect any piece of meat labeled boneless.

    I love your recipes, if people want to argue about a few dollars difference you are right, they have never struggled. You always give ideas for add-ins for those who have some money to spare.

    So many people have an Instant Pot pressure cooker that they never use. Try to find a relative or someone who will give it to you for free, or trade something. I eat dried beans 5 days a week without meat only because it's affordable. The Instant Pot keeps my kitchen from getting humid steamy and I don't have to use the stove at all.

      I love your idea of trading! Lots of us have accumulated things over the years that we just don't use. Also, depending upon where you live, libraries have them to check out just like books: Instapots, cookie cutters, baking pans, espresso machines, sewing machines, etc. Also, some kitchen appliances like the Instant Pots (bread makers, ice cream makers, etc.) can be found cheap at garage sales and thrift stores!!! I love it, I've gotten gooooood things I'd never be able to pay full price for. ❤

    Larry, just ignore all the scooters that in my opinion have never struggled in their lives. Im 72 years old and grew up in the same area as you ( in VA) and I know what it was like to eat wholesome but, inexpensive meals nearly all the time. Some people just can't imagine that a dollar or two can make a huge difference on whether a whole family eats well or a whole family eats sparingly. We love all the same things such as Spam, SOS, potted meat, bologna, soups and even Wonder Bread. I don't have to eat like that anymore but, I still choose to do so because it was and is still hearty, satisfying and belly filling and I can control whats in my food. When I can, I do try and keep the sodium level down as much as possible so I can continue to enjoy the same foods that i enjoyed as a youth. Keep up the great videos and best of luck to you and yours in 2024.

    For people that want to add chicken broth or stock, DON'T buy it from the story. Just save all your vegetable scraps in a bag and store in a cool place then cook them up in big pot for a few hours when you got the time. For meat bones, do the same as you come across them. My friend lets me take his bones after he picks off the meat; he would normally toss them. I haven't bought stock or broth in my life since I started cooking on my own. Bonus points if you pressure can. The Bernardian Standard processing times have never failed me, and I've easily stored up to 20 or more quarts of stock on the shelf. The freezer would have been filled to the brim ages ago, of which I simply use as a buffer now.
    Just food for thought. My family still buys low quality sodium chicken broth from the store, and I no longer ask why.
    Edit: Also, if you grow your own vegetables, save ALL the scraps. Even having just a couple of zucchini plants will create a gold mine of potential for healthy broth!

      For the bean broth / water mentioned in this video, I personally DO discard it. I give the beans a rinse then add more water in.
      My reasoning: I fart enough as it is, and I don't want more. Good news is that I'm not wasting the bean water. That stuff is full of good nutrients! Dump that around your vegetable plants. They'll love you for it!
      You see. I discarded the bean broth, but it still gets put to use. In the long run, I am consuming that broth. ;)

      I do the same thing except I use my crockpot and cook it down to half, freeze in larger ice cubes then use my seal n vac. Great for soup and stews.

    My mom makes a pretty good bean soup using a couple cans of cannellini beans, onions, celery, carrots, a ham bone we used the night before and chicken base

    Re: the meat options... I’ve had really good luck using diced cheap smoked sausage in bean and split pea soups. Even the cheap John Morell one’s from Dollar Tree works out fine.

    When I was a kid, my sisters and I lived with our grandparents for a time. She used to make navy beans and canned tomatoes. I really liked it and have made something similar as an adult. I'm now a senior and on a fixed budget and really appreciate these "on a budget" recipes. This looks like a recipe worth trying.

    I remember pinching a nickel till the buffalo sh#t, dropping a dollar charge for an unlisted number on my phone bill, my wife and I waiting until the kids were done eating before we ate and walking to work to save gas. So I can appreciate your point. Carry on ol buddy. Two suggestions, 1. to save volume, instead of boiling down, thicken with corn starch slurry, if you have it. 2. cut the meat into smaller pieces so every bowl get more bites of meat. God bless.

      👍 ❤ Mash some of the beans because the starch in them will definitely thicken the soup. It doesn't have to be a lot of them - a couple of tablespoons depending on the volume of soup. I used to wonder why I had to thin out the soup the next day and it took me a bit to smack my forehead with the realization, lol! I thought it had to do with the cooling down and reheating.

    Just a thought , I have noticed lentils have not gotten up in price as much as beans so sub lentils for the beans ( they will also cook faster so use less energy ) , If you add barley you dont have to do the turkey leg and its a bit more affordable and use a smoked seasoning to get the flavour, I might also spend $1 on a can of tomatoes to add some variety to the soup and a tablespoon of vinegar just before serving.

    It is indeed a struggle when people on low incomes (whether state-funded incomes or low-wage jobs) are quite literally counting the pennies just to work out if they can eat tonight or not, I've been there more than enough times, thankfully I currently am not in that position, for now (this is the UK after all and people who are unable to work are more frequently being punished for being unable to work!), but it certainly does hit a nerve when people think that it doesn't happen or it doesn't matter that someone is raiding the back of the sofa for lost coins just to buy that little something to make it through the next day or two...

    Great recipe as always. Soaking the beans overnight saves a few hours fuel costs. Also, if cooked for one or two folk, this amount could be a second meal, reheated with some potatoes added.

    And here I thought it was just my area that had a shortage of smoked ham hocks! I haven't been able to find them for months now, so I opted for smoked pork neck bones from Walmart, instead. I noticed no difference in flavor, using smoked pork necks, as opposed to using smoked ham hocks! Just had to be careful and pick out the smaller pieces of neck bones, but they did the trick! Added some much needed smoky flavour! 😋

    I've been making a lot of soup lately and consuming a lot of beans & lentils, and damn, celery got EXPENSIVE! Its asked for in every recipe too! I add extra of other veggies and add celery seed or salt instead for the same flavour boost.

    I'm not in the 1/2 cup category myself thankfully, more like the 1.5 cup but I still like to practice this low budget style cooking. It's how I grew up anyway and really it's just food... you only eat it for nutrition at the end of the day and your meals are always highly nutritious (something my dad was very insistent on all of us kids was to eat nutritious meals) well except for beans... I started eating dry beans when I first came across these videos about 3 years ago and dinner and a show indeed! I would throw cabbage in there as well for the entertainment factor :)

    If I had to choose a single recipe from this channel to survive off of, this would be it. Beans are filling and such an incredible powerhouse of nutrition, protein, and fiber. Combine that with the vegetables added into this soup and you have all the nutrition you need to thrive. Any sort of meat is just an added bonus.

I definitely appreciate you, Larry and Family! I love Great Northern Beans, and I'd love to see your take on white chili! I've never made it or even tried it, I hear it's pretty good! Even box broth is getting up there. Heck...if you can't afford that, ramen flavor packets will work, and that's still relatively cheap for one pack. That's all you need!

    The Scooters need to understand where you are coming from with these meals. There were times growing up that we didn't have a lot of food in the house. This was the stuff we ate. We also ate a lot of game that was acquired out of season. You do What you have to. Every dollar counts and we all are looking for ways to lower the grocery bill. Thank you.

    Larry, FYI. In the 1930s Weston Price did a world research on food. One of the things he found about beans is their phytic acid is detrimental to our digestive tract and by soaking them overnight the phytic acid turns into (I think it's called) phytate or phytose which is digestible for us and does no damage to our guts. The beans do fine without the soaking but we don't do as well as they do. That is why you 'should' soak your beans, grains and legumes.

    Anyone who doesn't find your increased cost for one meal concerning hasn't done the math for what similar cost increases per meal mean for a week's worth of meals. A week of three meals a day is 21 meals, an increase of $2 per meal is $40+ a week. A significant hit. It won't work quite that directly, but the hit of ever increasing prices is a problem.

    Smoked ham hocks are a revelation! One year I did the opposite substitution you did (ham hocks for smoked turkey). It was a bean soup for a crowd of 60 and I couldn't find turkey. They were a delicious addition. I also found a local butcher that smokes their own.
    I really enjoy the cooking videos. They show some good inexpensive options regardless of the serving size. If you can make a hearty soup like that for 8 bucks, you are really living frugal and well.

    Growing up my family was poor and we always ate struggling meals. One I remember is brown flour gravy and boiled potatoes. The way to make it is you boil some potatoes the put some flour into a frying pan or even a stock pot and heat it untill it turns brown, you have to constantly stir it or it will burn. When the flour is cooked enough add water to make gravy. Drain the potatoes and put them on your plate and pour the gray over them. Sounds terrible I know but we ate it a lot.

    I think that if someone is financially struggling, I'd skip the celery entirely. It doesn't bring much to the party. Maybe I'd sub a can of rotel, or a package of kroger mixed frozen veggies (these might have jumped to 1.29 or so though).

      I agree, also celery doesn´t keep so well at least in my hot climate. You know what goes well instead of celery? Green bell peppers! Lately I´ve been using them instead of celery, 1/2 green bell peppers for the amount of celery and unless it´s used raw, I think it´s a great substitute!

      @@user-of9il6cd2i my wife hates green bp, the flavor can be kind of polarizing, I do like the yellow and red ones. But all of them have a bit more health benefit than celery. I think wolfepit has been corrupted by the celery lobby!

      Celery does bring a lot of it's delicious savoury flavour but at that price and considering calories it's better to buy more root veggies instead.

      I buy either celery salt, celery seeds, dehydrated celery bits (all in the spice aisle) at the 99cent store for times when I can't afford fresh celery. It takes so little of the dried stuff to add flavor. When I can buy fresh or when it's on sale, I chop and freeze some.

    It' so funny. I was trying to make a cheap meal that would have some leftovers. I made Bean soup, added some left over carrots, onions, and some ham- all needed to be used up.

    I make this regularly and can attest to the prices. Locally I get bulk pinto beans for less than $1/lb so that's what I use most of the time, but they're not as creamy as white beans.
    Edit: I often use pork jowl bacon in place of ham hocks for the same price.

      If your stores carry bulk peruano or mayocoba beans, they’re a nice creamy bean. The Hispanic markets in my area sell those in bulk along with the pintos.

      @@calihapamama Yes, I frequent the Hispanic markets for that very reason (as well as the availability and low prices of things like pork and beef neck bones). Even there the other types of beans are all over $1/lb in my area (and the peruanos are the most expensive) while pintos can be had for as low $0.79/lb.

    Good job! Get some day old bread. Everybody gets a bowl of soup and a chunk of bread for sopping. If people are bitching, it's because they never went to bed hungry.     Made this with 2 turkey legs left over from Christmas in an Instapot using the soup button. Turned out great. Going to try the SOS next. Thanks for the great videos and keep them coming.

    I have found that hot soaking the beans for an hour in boiling hot water, draining and adding fresh really helps with being gassy. I soak over night and drain again, the next day.

    Some people have to complain~ You keep doing what you do Mr Wolfe... I grew up eating Bean soup, lentil soup, and all the other musical soups!! Comfort food and you can do so much with your basic recipe! Thanks Larry~

      Tips to add flavor : Use bay leaf ( but take out ), use dash of vinegar or lemon juice , and they all do add flavor w/oalot of expense!

    I love your videos. Not too bad on budget myself but some really solid ideas here. Thank you. As a side note you should mention Chef-boy-Arden Ravioli. One can is usually a dollar. They claim no preservatives and taste pretty decent. And most time cooking involves a couple of minutes in the microwave.

    Thank you for doing what you do with all of these informative recipe videos created on a very consistent basis. It's very helpful to many I am sure providing cost analysis breakdowns to people who may be on a shoestring budget/struggling financially. Even with the rising costs of food at a majority of grocery stores across the country due to inflation and general cost of living increases coupled with stagnant/flat lining wage increases accross the board, showing there are affordable alternatives to shop is valuable information. I frequently shop at the dollar tree for alot of different goods, and it literally saves me a bundle strategically shopping there for a great deal of many things.

    I'm lucky because of where I live, our grocery chain is part of a large co-op and it's cheaper to get many vegetables, meat, and fruit. I can get many types of dry beans in bulk very cheap.
    After holidays turkey can usually be found very cheap and if you cut one up you can smoke parts, roast some and grind some. Save the bones and make stock.

    Love it. I remember watching this movie at home. My Daddy, brother, & I thot it was the funniest thing we'd ever seen. Momma thot it was "vulgar". Momma is 87 & I let her see it again. She said it was still "vulgar". 😂😂😂

    My family has always been dirt poor, so I completely understand all of this. I also don't add salt to anything until it's on my plate to save salt. Because I never taste it when it's added while cooking. And by not adding it until it's on my plate, it means anyone with high blood pressure should be fine.

    A lot of people go "Half a cup don't fill ya!" They're right. But as you lose weight, or if you're like me and have stomach issues, half a cup is more than enough to fill a small stomach. As you lose weight, as you continue to eat by only small amounts, your stomach size WILL adjust to only handle small amounts.
    Also, when we make a turkey for thanksgiving, fortunately we're able to get them cheap due to the area we're in with all the farms around here, we save the rest of the carcass, all the skin, the drippings, the bones,, etc.
    We break it into pieces and put it into large ziplocks and then dump the leftover gravy in there, since we make the gray out of the drippings from the turkey, and freeze it for later use. People will sometimes see that boney mess frozen in a ziplock and go "eew, what is that??" if they go into my big freezer, and I simply say "That's several gallons of turkey soup."
    And yeah I do mean gallons. I have a huge slow-cooker that can fill up to 10 gallons of liquid. So what I will do is put the turkey carcass in there with as much water as I can fill it with and let it come to a boil. Once the carcass has boiled enough, I strain out the carcass, keeping the liquid obvs, and let it cool enough to be handled, if only barely, and peel off ALL of the extra meat that's still on there.
    Then the meat is chopped fine and returned to the broth that's the result of boiling up the entire carcass. Then I add my veggies and my seasonings and let it cook. Once the several gallons of soup is ready, we transfer the bulk of it to ziplocks, we don't fill them all the way or they'll burst as they freeze, and then carefully put the sealed ziplocks to freeze. We usually end up with six to eight two-gallon ziplocks full of soup.
    The rest of the soup is that night's supper.

    Heck, I ain't even struggling, but I *am* allergic to meat and reliant on beans to get my protein and the way bean prices have gone up these last couple of years are *absurd*. The greed of some folk is just disgusting.

    I just made this today, I had some country style salt ham that was given to me during Christmas instead of smoke turkey, I also made a pan of corn bread to go with it. Delicious! great work Mr. Wolfe!

    A big THUMBS UP for dried beans! So cheap and a big savings over canned beans. I always soak/cook twice as much as I need for the meal and freeze the rest of the cooked beans - convenient like a can of beans but still cheaper.

    Please search a recipe for a greek, bean soup dish called "fasolada", you will never regret the final flavour outcome. A more rustic version can include country sausage as the meat, or basically any kind of meat trimmings for a cheaper option.

    If you can, get the cheapest rolled oats or instant rice you can find to keep on hand for things like this. Neither one will impart any flavor, they take on the flavor of the dish. Add 1 cup to the pot when you put the meat back in. It doubles in volume, so the result will be a bit more food for each serving.

    I do pretty well now, but I've had multiple times in my life I was spending more to feed my cat than myself. These kind of recipes are nostalgic for me in a weird way, and I love them. Nowadays I make huge batches of this kinda meal, and coworkers love it when share!

Made beans last week with rib roast bones and cleared out any veggies didn't use up. Once a month atleast everyone should make a bean soup👊, tyvm tc

    For years I added no salt to my beans, while llsoaking, and I had to cook my beans literally all day, 6-10 hours cooking, after at least 24 hours soaking. So I hardly ever cooked dried beans.
    Then I read somewhere that with hard water, I should soak in salted water, and even a pinch of baking soda. The article claimed that if there wasn't sodium in the water for the beans to soak up, they would soak up calcium and remain hard.
    Well! I tried it, and I didnt have to cook the beans all day long.
    We have very hard ground water here.

    Beans are great flavor sponges, just about any seasoning, herbs and leftover meats will work. As(s?) for rear end symphonies, when I feel a real masterpiece coming up I open up the front door and let it resound through the stairwell.

    My vote: KEEP the water - it's incredible flavor and enhances the soup's texture. 😀 Decades ago, the first and only time I ever changed out the water, those beans were flat, nearly tasteless even though I had added onion, bacon and garlic. Took me a bit to figure out to keep that water.

    I would eat that for 3 days with cornbread. $3.50 a day and this gal happy with beans and cornbread. Use to go visit grandma and grandpa. Guess what we had EVERY time. Beans and cornbread. Well worth the hour drive.

    I can see the celery doubling in price because if you buy it out of season its expensive as hell. The bean price blew me away. Especially since I checked my Wal-mart and a 2lb bag there is only 2.24. Weird. But THANKS LARRY FOR THE WORK YOU DO TO TEACH US THIS STUFF.
