I accidentally found your recipe by chance. Went to the store, bought the ingredients, and off we went. We just finished eating the soup that came out so good even my teenage son liked it. This soup is so comforting. I've also sub baby spinach for the kale. It's still delicious and yes I use mild Italian sausage. It comes together fairly quickly. I haven't used bacon with mine but I've seen several recipes using bacon as well as sausage.

i used your recipe as a “guide,” and it came out delicious. i added broccoli stalks and some cannellini beans to it. have a family member that does not prefer dairy, so i puréed a can of cannellini beans and used that instead of heavy cream and used nutritional yeast instead of parmesan. thank you for the base recipe.
I made a few updates to this recipe which I personally believe improved it slightly and may be a touch more accurate. 1. Leave the peels on 3 of the 5 potatoes, actually Zuppa has a lot of the peels still. 2. Use regular chicken stock not low sodium, (still won’t be as salty as real Zuppa but it definitely adds to it) 3. Use slightly more cream (cup and a half.) 4. I boiled it for about 25 minutes to reduce it and enrich the broth. Anyways, I’m just an idiot who likes to cook but maybe you’ll find these tips helpful!

This looks so yummy! I can’t wait to make it! I have a tip that I do with onions especially because they make me cry, but works with other ingredients too. When chopping onions for a meal I chop an extra (or more) & freeze the extra ones (1 chopped onion/baggie) and store in my freezer. This gives me a break from tearing up or can come in handy if I don’t have one.
I used to work for subway when I was 19, and their trick was grabbing their onions and sticking them in their walk-in freezer for 15 minutes. We would then grab them and chop them. TEAR FREE, works all the time. I do this at home too.
Soak the onion in water for 5 mins before cutting it and also grab a piece of chewing gum and chew for the duration of working with it! You have been life hacked!
Natasha, I made zuppa toscano soup last night. Cooked cubed little red potatoes in my instant pot in chicken broth x 5 min w/ manual release; cooked thick cut bacon in air fryer (350 x app 15 min). Combined with Italian sausage, onions, garlic in dutch oven brought to simmer, subbed 10 oz fresh spinach for kale, cooked gently app 5 min, then added cream. Served with a sprinkle of chopped bacon pieces (too hungry to grate parm) on top and it was sooooo good.
This is a great recipe! I've made a version of this soup for years using two or three recipes that I found on the internet, but this will be my Zuppa Toscana recipe from now on. Thank you Natasha!!! Two Big Thumbs Up!

Yummy, this is one of our favorites too! I add a little flour with the bacon grease to make it thicker, like a chowder instead of a soup. Both options are good! And FYI: Plain coconut or soy creamer works perfect in this recipe for those of us who can't have milk.

Hi 👋 Natasha I made this soup and I added Swiss chard instead of kale just because I love Swiss chard. The soup came out amazing. When i saw you had a recipe for Zuppa Toscana I had to try making it. We don’t have Olive Gardens where I live in Canada. The only time I get to have some is when I’m visiting Florida. I always have 2 bowls because I don’t know when I will get the chance to eat it again. I’m so happy I came across your recipe. This recipe is definitely a keeper. Love this soup! Olive Garden is about an hour away, my husband brought me some Zuppa Toscana the other day when he had business in that city. Your version is so much better, I didn't expect this. I'm so glad I ran across your great recipes when I looked for the soup recipe.
I made this without potatoes to keep the carbs and calories low. I went with cauliflower, mushrooms, 1 cup of chopped zucchini and half a medium eggplant cut into bite-sized pieces (added toward the end of simmering so still a little firm). I will be making this every week this winter. It was outstanding. I used fresh 1/2 and 1/2 . Warm the 1/2 & 1/2, mix in a level tablespoon of flour and then add some warm soup broth to the dairy mixture before adding all to the soup. Don't boil it and the dairy will NOT curdle. Natasha's beet borscht is also amazing as is the French onion soup. It was like the now closed Top of the Sixes Restaurant at Rockefeller Plaza in Manhattan, NY. Natasha is the real deal - World Class! Thanks, Natasha!

I made this soup and its sooooo delicious, my family felt in love with it😍😍😍😍 thank you so much Natasha. I'd also really like to see you make broccoli cheddar soup.
I made this plant based with vegan bacon and sausage. I used some vegan cream cheese and some oat milk in place of cream.. also added a bit of white wine vinegar.. I saw some other recipes that had vinegar in the recipes. The little bit of acidity added so much. Also added a generous amount of Italian seasoning and lemon pepper. So good!!
The only change I made was to use Italian sweet sausage instead of hot sausage (I'm a wimp when it comes to spicy stuff....) and it was delicious. Best soup I ever made! I think it would also be good with cannelli beans instead of the potatoes, gonna give that a try next. UPDATE: I did make this again with cannelli beans and chicken instead of sausage. I also added sliced carrots because they are pretty and I used just chicken broth and 2 cups of half and half. So I guess this can no longer be referred to as Zuppa Toscana, but it sure was was delicious!

I love this recipe. I recently accidentally bought a pre-cooked sausage: dartagnan smoked andouille sausage. I decided to try it in this. I cubed it and threw it in at the end of the bacon cooking.. just long enough to release the oils.... holy cow it was next level.
I absolutely 100% agree that red pepper flakes absolutely makes this recipe. The sausage by itself doesn't *quite* provide the level of "zing" that I'm looking for. This is a great recipe and video though
One of my favorite soups to make! Anyone who trys it, is hooked! Love fresh kale from the garden. If you have picky eaters, you can cut the kale up really small and add it with potatoes to make it softer. Also I've used regular breakfast sausage ( roll kind ) in place of Italian sausage, and it comes out amazing!
