Yes I have tried the real Roman carbonara and it is no wonder the Italians are so protective of their food. The rest of the world has ruined their dishes no end. There is nothing more enchanting than sitting at one of the many piazzas admiring a fountain or people watching with a proper carbonara with that delicious guanciale melting in the mouth. And no cream in sight!
