Your method of making crispy fried things with no batter has made it much easier for me to enjoy fried foods! Thank you! I've found great success coating the chicken with a Mexican product called masa harina instead of flour. Very absorbent, lots of it sticks to the meat, comes out very crispy. Cheap too, and nutritious.

PS: with firm tofu instead of chicken this could almost be Rasta or vegan, if none of the seasonings include chicken bouillon powder. Something rougher might be better than flour for tofu- I like oat bran for a lot of frying.
You say “no eggs, no milk,” as if that was odd. You’re not supposed to use either of those to fry chicken. Just salt, pepper, flour, and oil. And a cast iron frying pan.
@@KTM_Atlanta Sunflower seed oil is always a good choice. Very neutral flavor, part monounsaturated (like olive oil) so takes pretty high heat. If you have near eastern groceries to shop at, grape seed oil makes the crispest anything. Much too pricey in a health food store to even think about but quite reasonable in ethnic markets.

This is how I grew up seeing chicken fried. Then all of a sudden im seeing eggs then milk. My only issue is the oil. It scares me using all that oil. I only buy the small bottle of oil, lol.
This is how I like my fried chicken. I do add a little buttermilk but the basis of my recipe is seasoning. I don’t do all that corn starch and all that nonsense. too much going on. fried chicken don’t need nothing but seasoning and ALL PURPOSE flour. All that egg and nonsense make the chicken weird
