I just wanted to say that your videos have changed my life. I have a disorder where any food going into my small intestine has a hard time going through it without myself throwing it all up. The result has been a drastic loss of weight, about 70 pounds. This has left me looking like the skin is just hanging on my bones. Well, recently I've been watching all your videos and the enthusiasm of which you enjoy the different varieties of cuisine, has given me a renewed love for foods, and thus my appetite has had a huge positive change in how I also love foods. From ramen noodles, to wagyu beef, to Italian sub sandwiches, to crab legs (you should make a video on how to best eat snow crab legs.) and much much more. My appetite has skyrocketed, all thanks to you, Ying, Micah and all your friends who accompany you on your journeys through the world's kitchens, eating great, diverse, delicious food, and describing each bite in layman's terms. I was there in late March, it was one of the most phenomenal meals of life. I had never tasted steak like that, it was truly enlightening and transcendent.
I was a Military Brat, lived for a year in Spain, 1959, Soaked up the culture and tastes. Every weekend was a new city and new flavors. Happy Mark has illustrated some of that here.
Basque Country has one of the best gastronomies in the world. Famous in Spain for having the best food. A historic gastronomy mixed with top modern cuisine (region with most Michelin Stars per capita in the world). Using seafood from the Cantabric sea, veggies from Spanish farms, one of the best meats in Europe and Spanish top wines. Still unknown for many, definitely a must.
No doubt it is amazing! But they don't don't have an Atlantic coast line. The best seafood in Spain is Galicia. The best in the world for coastal type fish is Portugal and Galicia.

The food looked so fresh, also very rich! The restaurant is very beautiful, and their presentation of their dishes are superb! My favorite was the grilled fish and those fresh vegetables. Extebari Resteraunt was a total experience. All the dishes from the Caviar to the beef to the seafood to the dessert was so wonderful. The chefs the waiters and of Course Jose' with his knowledge but the book was the knowledge of the dishes too. Seems like all of you enjoyed a tasteful experience! A souvenir from Spain!!! Honestly, it's difficult NOT to find fresh and great ingridients in Spain, and they know how to not ruin them. So every 3rd restaurant in Spain feels like best in the world :)

The amazing connection I see hear with all Spanish cooking is top fresh ingredients with minimal additions mostly just oils salt smoke and the incredible talents of these chefs. The KNOW HOW ! Nothing super fancy or outrageous like you see in the other experimental restaurants. I’d be much happier here in Spain than in the foamy places like Denmark, California or New York
that´s precisely what has kept spanish cuisine so isolated when compared to other countries like italy or france. Those cuisines tend to place a focus on combinations and technique which can be replicated anywhere in the world. Spanish food heavily relies on simple preparations to make the local ingredients shine in all their splendour. Many people outside of spain don’t know about our food because its really expensive to make a outside of the country.
@@mariogarciaperez7211 as a fellow Spaniard, I'd argue Italian cuisine is as delicate and product-reliant as ours (that's why the "italian" dishes that come to other countries are variations and adaptations). Anyway, we have both that side but also stuff like Ferran Adria or Arzak in the past and people like Dabiz Muñoz or Dani Garcia currently, so haute cuisine, technique and experimenting is also part of the Spanish culinary scene... Just not on Etxebarri
The way Mark closes his eyes every time he tastes a new dish... It truly conveys how amazing the food is!!! I'm proud to be Spanish and happy that our gastronomy is being internationally recognized. Spain is a mosaic of different regional cuisines (mostly based on traditional cooking), and Basque food is certainly among the top ones. I love it!

I had lunch once, after many stupid pseudo molecular chefs it was truly a relief, but it is pricey (not expensive, yet pricey) and mega difficult to book a table….

This restaurant you saw in tge video is highprice, but tou can have delicious meals for may be 14 € in what is called "menú del dia", which is meant to be for workers, or as a daily regular lets say "healthy" meal for an average day.

Fast forward to 2010 I married my wife in El Escorial in Madrid and we desperately tried to make it to this place but I couldn’t secure a reservation in the time we were in Spain. In some places in the world is so hard to find dishes that let the main ingredient speak for itself. A lot of food is over seasoned or over sauced to compensate for bland main ingredients. Based on my experience in Spain, something as simple as fresh tomatoes rubbed on bread and add a dash of olive oil is just delicious.
If the tomatoes were really rubbed on the bread, I could bet you've been in Catalonia, Baleares or Valencia. Outside of this places is hard to find this simple "pa amb tomàquet", well executed.
@@zesid Yes, but they usually make it wrong. They triturate the tomatoes with olive oil and salt instead of rubbing it into the bread and then add the salt and the olive oil.
On my last trip back from Lisbon, I have met a Chef from Barcelona who was sitting next to me and we started to chat about Food and he mentioned a couple of amazing restaurant in northern Spain. Now while I was watching this clip I remember that I've not the names of those restaurant and this was one of them.. Such a small world.. 👌

I Love when you include the price of a remarkable meal like this. Very Affordable considering the amount of delicacies included (excluding the wines, of course). But all in all, a meal one must only have once that will be remembered for a lifetime. Excellent!
the more important plate is the chuleton and it was divided by a lot of pieces to be shared... if you pay this money for the entire piece not bad price if not is tremendous expensive.

Definitely one of the best restaurants in the world. i first learnt about this restaurant many many years ago when Anthony Bourdain visited it while filming his first show. There, he communicated in English with a young chef by the name of Lennox Hastie, who now runs a very successful restaurant also cooking with fire in Sydney, Australia.
Watching again... Love this series. I love the red shrimp from Argentina. A lot of my friends though didn't care for it I thought it was absolutely tremendous. Different texture absolutely devine.😋😎 Never met a shrimp 🍤 I didn't like🥰. Have to be honest I could devour that whole rib eye.🥩

Its these hidden food gems in the "pueblos" all over Spain that I love discovering! The more rural and more pueblo the better the experience: sight/sound/smell/taste! But overall Spain has delicious food everywhere, whether urban or rural areas. VISIT SPAIN!

I agree country home cooking and simple dishes are the best in Spain, yet at the same time he is showing a more elegant side of Spain..Many outside of Spain have no clue of the scope and variety of dishes in Spain...

You can land in Bilbao, take the bus until San Sebastián and take a urban bus with last stop at the Town of Astigarraga (this Basque name is complicated pronounce for me too 😄) this town it's famous for their cider cellars and usually offers a menu with salad as first course, omelet as second course the main course it's a huge pice of Txuketon and, as dessert chesse and nuts. You can eat all the cider that you want and refill directly from the barrels. All this for 25 €/person. Serve only from February until May.

Anyway, we have both that side but also stuff like Ferran Adria or Arzak in the past and people like Dabiz Muñoz or Dani Garcia currently, so haute cuisine, technique and experimenting is also part of the Spanish culinary scene... Just not on Etxebarri

I'm proud to be Spanish and happy that our gastronomy is being internationally recognized. Spain is a mosaic of different regional cuisines (mostly based on traditional cooking), and Basque food is certainly among the top ones. I love it!

This restaurant you saw in tge video is highprice, but tou can have delicious meals for may be 14 € in what is called "menú del dia", which is meant to be for workers, or as a daily regular lets say "healthy" meal for an average day.

Awesome! I’m a Spanish born Yank of mixed descent meaning my folks were both US Servicemen. Fast forward to 2010 I married my wife in El Escorial in Madrid and we desperately tried to make it to this place but I couldn’t secure a reservation in the time we were in Spain. This place is one of my bucket list before I leave this Earth.

In some places in the world is so hard to find dishes that let the main ingredient speak for itself. A lot of food is over seasoned or over sauced to compensate for bland main ingredients. Based on my experience in Spain, something as simple as fresh tomatoes rubbed on bread and add a dash of olive oil is just delicious.
If the tomatoes were really rubbed on the bread, I could bet you've been in Catalonia, Baleares or Valencia. Outside of this places is hard to find this simple "pa amb tomàquet", well executed.

@@zesid Yes, but they usually make it wrong. They triturate the tomatoes with olive oil and salt instead of rubbing it into the bread and then add the salt and the olive oil.

On my last trip back from Lisbon, I have met a Chef from Barcelona who was sitting next to me and we started to chat about Food and he mentioned a couple of amazing restaurant in northern Spain. Now while I was watching this clip I remember that I've not the names of those restaurant and this was one of them.. Such a small world.. 👌
This is the third best restaurant in the world. It's not a hidden gem in the slightest, the waiting list is like 6 months long

Definitely one of the best restaurants in the world. i first learnt about this restaurant many many years ago when Anthony Bourdain visited it while filming his first show. There, he communicated in English with a young chef by the name of Lennox Hastie, who now runs a very successful restaurant also cooking with fire in Sydney, Australia.

Its these hidden food gems in the "pueblos" all over Spain that I love discovering! The more rural and more pueblo the better the experience: sight/sound/smell/taste!
But overall Spain has delicious food everywhere, whether urban or rural areas. VISIT SPAIN!

You can land in Bilbao, take the bus until San Sebastián and take a urban bus with last stop at the Town of Astigarraga (this Basque name is complicated pronounce for me too 😄) this town it's famous for their cider cellars and usually offers a menu with salad as first course, omelet as second course the main course it's a huge pice of Txuketon and, as dessert chesse and nuts. You can eat all the cider that you want and refill directly from the barrels. All this for 25 €/person. Serve only from February until May.
