I was thinking that was a lot of sugar but then saw all the rest of the ingredients and realized it's needed to balance out the salt and spicy heat. Excellent recipe, Siri. 👍

YES! I am so happy to hear that you're going to Thailand for your birthday... and HAPPY BIRTHDAY by the way. How long will you stay? Do you know what part of Thailand you will stay in? If you're in Bangkok for at least a few days, I would recommend you going to visit Dwight over at The Courageous Kitchen. He is an American expat running a non-profit to help Hmong refugees in Thailand. You should reach out to them and see if they are having any events or cooking classes during the time that you're there. Here is their website courageouskitchen.org/core-team/
Ok, when it comes to food.... hit the little hole in the walls, the street food, the small-time family-owned shops. You're going to find the best most authentic food and truly get to know what Thai flavors are all about. The good thing, it's easy to find these types of food spots in Thailand, they are everywhere and you can find food in Thailand 24/7. Of course, you're going to have the hotel restaurants and higher-end places that you will want to check out. But if you want to fall in love with authentic Thai food, hit the street. Don't be shy to order 2 or 3 dishes per seating (in the smaller family-owned places). You will find the serving size is usually smaller than you get in the US, so don't be shy about getting 2 or 3 different things. If you want to try my favorites, then order these dishes:
1) Tom Yum Goong Nam Sai (don't forget the "Nam Sai") (best as a side with your lunch or dinner)
2) Kao Moo Deang (pronounced like: cow moo dang) (best for breakfast)
3) Kao Mon Gai (pronounced like: cow mon guy) (breakfast, lunch, or dinner)
4) Suea Rong Hai (pronounced like: soo-ah long hi) (also called "Crying Tiger" if your restaurant speaks English)
Also, if you're in Bangkok, of course, one of the main tourist attractions tend to be The Grand Palace (which I highly recommend). Also, an amazing weekend place to go if you want to shop all day is Chatuchak Market (also called JJ Market by the locals). It's the largest market in Thailand, with over 15,000 stalls. It's like one HUGE swap meet, but it's not second-hand items, its new items. Great place to buy stuff to take back home. And the locals DO KNOW that JJ Market is a huge tourist destination, but it's also a local hot spot. That said, be prepared to negotiate prices on everything.

That's great. Your hotel is located really close to some great places. Lumphini stadium is a place where fighting champions compete in Muay Thai. Only the best the best fight there, so if you're into watching a match, then you're very close by. Also, the Jim Thompson House Museum is a very cool place, and interesting history. Also, you should be sure to get to the close by waterways and take a boat trip through the canals :-)
