In Vietnam here, we just mix fish sauce with sugar and thai chillies (make sure it’s extra spicy), no need to cook at all. We dip green mango in that sauce (espcially when that mango is too sour to eat).
We have a variation of this dip in Vietnam too, and I gotta say it goes so well with sour crunchy fruits. People commonly say women during their pregnancy adore this combo, I would say non-pregnant folks love them just as much lol
I watched your videos several times, and I’m person who likes Thai food too, don’t have time to try cooking Thai food but I like the way you talk, and you show everyone how to cook or make it so detail and clearly , and good thing is I learn some words Thai language from your cooking channel 👍👍
i have just started loving nampla wan when i went to the ratchada night train market...they sell the diluted kind like the one in this video...but they also make the dried paste kind and both are sooooo good with some crunchy green mango or koesavoey mango...just the other day i bought a small tub and finished with one whole mango all by myself lol
This recipe is definitely fabulous. It tastes almost the same like they sell in chatuchak market in bangkok. I use all my local ingredients (gula jawa, local shrimp paste, and local dried shrimp which I pounded manually by hand) and for the fruit itself, I use local “bangkok” guava sold in my country. 😋
I made this and brought it to my office as a treat. It went very well with celery sticks, french carrots, crowns of the broccoli, granny smith (of course) and the sour strawberries. Everybody loves it. They dipped their fingers into the sauce when the veggies were gone. Thank you!
My mom add dried shrimp like tripple of your recipe and a little more challot and use dried chilli instead of fresh, yum. 😋 And we just got a chance to have high quality fish sauce in hand, it really make our nam pla waan taste even better!!
Ahhh I love this! In Malaysia there's a similar dish called "Rojak", it's made with the same ingredients :) I miss this so much since I'm living overseas and don't get to eat it often! Have to try this recipe, thanks!
@@nurinahusaimi7005 tak sama sngt kak. Tok kami mmg asal thai, dia bt ni tp beza dia guna ikan kering tumbuk (ganti udang kering), cabai kering sangai (ganti cabai hidup). Yang lain sama. Gula mmg kena guna gula kabong siam. Pakai gula pasir ka, gula melaka tak sama, lari rasa dia... Sedap kak oiiii.. Yg rojak tu depa bubuh petis udang, dan mmg rasa xsama. Yg thai punya rasa fresh lg bagi saya. Kak try bt, cicah pelam muda. Mmg dappp...
At first, i was like ewwww. But I remembered, Vietnamese people eat sour fruits with fish sauce and sugar all the time. And it’s DELICIOUS!! Gotta try this people! It’s gooooood!
I don't think we have anything like this in the Philippines, at least where I'm from, but I do get the salty+sour fruit combination. We dip green mangoes in fermented shrimp paste and pomelo in salt
Fermented krill paste cooked with bird's eye chili and sugar is probably the closest. How liquid-y it is depends on individual preference. Other ingredients (shallots, cocoa powder, etc. are optional)
Thank you again, Pailin. There is also more simple version exists just as a mix of sugar, chili, salt and umami. I like it and usually eat with green mango, but few weeks ago I tried it with grapefruit/pomelo and it blew my mind out!!! 😮😋😍
In Indonesia, we called this RUJAK!! And we just have to have them around 3 PM in the afternoon. The spicier the better. In some cities they just put in shrimp paste instead of fish sauce. But in Bali, they have the fish version. Best when you just use white sugar instaed of palm, and eat with with young mango. Super delicious!!
South East Asia condiment for fresh cut fruit. Lots of type for every country, but it looks the same. In my family, we blend the red/green (bird eye) chili mixed with palm sugar, tamarind juice and 1-2 tbsp regular sugar for extra crunchy when bite the fruit and make it thicker. Sweet & sour from the fruit, sweet, sour, spicy from the sauce is the best combination. You will never stop to keep munching it
In Indonesia Some Region add Peanut , or add Ripe " kaweni " / Soursop for make the condiment more sour or add kecombrang ( according google Thai people call it as daalaa ) to have a stronger taste.
It's samiliar with rujak. Have you tried with star fruit? It's so good. Also some people like to add bengkoang but personally I don't like it. My mom likes almost ripe papaya and my sister likes chompoo or rose apple the most
It is actually. That's why I'm here to search for the recipe after watching it. Haha. Got curious and I happen to have all the ingredients and some fruits in my house.
Looks tasty. I was confused at first cuz I thought the dip was supposed to contain fruit itself. I wonder how this would work out if you cook it into a hard candy. I doubt it would last too long, preservation-wise, but it would an interesting treat.
Ohhhh, i've been looking for something for the early strawberries. Thank you so much for this recipe!!!! And what's the television show you hinted at at the beginning???
In Philippines wi sauted the shrimp paste with garlic, shallot, tomatoes, then add the shrimp paste ,then adding the sugar and the last part is vinegar.( so it taste salty and sweet and tart not much) and im using spicy shrimp paste already.
Did this become popular because of 'karn la krang neung...nai hua jai' ?? That was the show I saw it in and wondered what it would taste like ^^ Thank you for the recipe :3 I recently made your kai jiew and it was so easy and tasty!
I love this stuff!! But when it comes to SUPER sour fruits like the tiny sour mangoes my family usually just thinly slice it and dip with straight fish sauce or shrimp paste lol
Now I want to harvest again our carabao mango. we still have the unripened one and just dip it with shrimp paste. Or buy a green mango (we call it indian mango). salivating while thinking about it.
Hi Pai, could you please do a video Of how to make Toong Tong I have tried twice now varying levels of disaster first time they didn't go crispy and the second they kind of split in the oil thanks

Yum! The Lao version has padak and toasted rice powder and not as much sugar. my favorite snack ever
In Vietnam here, we just mix fish sauce with sugar and thai chillies (make sure it’s extra spicy), no need to cook at all. We dip green mango in that sauce (espcially when that mango is too sour to eat).
Thanks for a very easy TIP way of making it.

In Indonesia we call this rujak, but we also add crushed peanuts in the sauce. This looks great too!

The nampla waan and sour fruits is the best combination!!
I love this idea of dipping all these other fruits! Because mango isn’t always in season here in Hawaii either and I’m always craving this dish!!
I love this sauce with unriped mangos. Completely salivating. You have to get use to the strong smell and it is an acquired taste.
James Punting lol ur so wrong
yeah, they're unripe mangos

Honestly after watching the drama, I myself been wanting to try this dip! Going to make it. Thank you so much for sharing!😙

I love Thai Nam pla wan sauce it’s really good I dip Mango 🥭 and Strawberry 🍓 oh my God it’s hella good on Strawberries 🍓
I made this and brought it to my office as a treat. It went very well with celery sticks, french carrots, crowns of the broccoli, granny smith (of course) and the sour strawberries. Everybody loves it. They dipped their fingers into the sauce when the veggies were gone. Thank you!

I'm a fan from 🇰🇭 Cambodia
This looks quite interesting. It’s like a salty and umami caramel. That’s what it reminds me of at least. And I love Caramel dip with fruit.
Yes! Salted caramel is so popular, now we're just adding fish sauce, lol!
Omg I'm soooo happy!! I've been waiting for you to do this!! Was actually going to ask you to do one!! Lol.
This sauce would be amazing on green mango and guava
Thanks for the recipe, I just made it yesterday and it’s delicious!

I don't think we have anything like this in the Philippines, at least where I'm from, but I do get the salty+sour fruit combination. We dip green mangoes in fermented shrimp paste and pomelo in salt

Those are called พริกเกลือ (chilli and salt). Two different things but same function.
I wanna see more “Adam” in the future videos !!!
Jicama and green papaya and sweet potato will be good for this dip too!
International fan of "buppesannivas" and searching for recipe .💙

I am drooling all over my shirt watching you cook this sauce. 😂😋. Thank you for sharing.
That is an amazing sauce, I am making that for next party!!!

Besides melted chocolate I have never considered a dip for fruit. Thank you.
It's samiliar with rujak. Have you tried with star fruit? It's so good. Also some people like to add bengkoang but personally I don't like it. My mom likes almost ripe papaya and my sister likes chompoo or rose apple the most
It reminds me with rujak (in Indonesian it means fruits salad with spicy palm sugar sauce to dip the fruits into)
lol it's from "Buppesannivas" if I'm not wrong.
It is actually. That's why I'm here to search for the recipe after watching it. Haha. Got curious and I happen to have all the ingredients and some fruits in my house.

2:13 Mmmmmm, nothing quite like shrimp coffee for the unsuspecting morning brewer.
Tell me about it :)
In Philippines wi sauted the shrimp paste with garlic, shallot, tomatoes, then add the shrimp paste ,then adding the sugar and the last part is vinegar.( so it taste salty and sweet and tart not much)

แซ่บอิหลีเด้อ!
Now I want to harvest again our carabao mango. we still have the unripened one and just dip it with shrimp paste. Or buy a green mango (we call it indian mango). salivating while thinking about it.
