I made this a few days back exactly as shown and this is the best peanut/satay sauce i've had! Better than the restaurants. Was sooo good and everyone loved it. Using proper curry was key as others stated. Thank you!!
I'm a catering and pastry chef in the SF Bay Area. This is an EXCELLENT sauce that people truly love. I've made it with standard massaman curry paste and with spicier red curry - even occasionally use a little of both to find a happy middle ground. It's always delicious and very versatile. FYI - I've thinned it slightly with lime juice, water, and honey to create a phenomenal salad dressing for grain bowls. I try to keep a jar in my home fridge for any chicken leftovers I end up with or to quickly dress noodles or salad. It keeps at least 1-2 weeks, but rarely lasts that long. Nice that it's an intentionally broken sauce - no need to fuss over the perfect emulsion. Thank you, a million times, for this recipe!
I have to say that this peanut sauce really is the BEST! I couldn't find palm sugar, but 4 tsp of brown sugar worked out very well. I've served this to friend and they all want the recipe!
Normally in America, anything that's this good.... is illegal :-) Question: I'm considering moving to Cambodia. Is the food there very similar to Thailand?
this is quite different than the recipes I've been trying and I must say I'm impressed. I love the coconut oil, the tamarind, cooking it to meld the textures and flavors. Most recipes are just "whisk together some peanut butter with 3 other ingredients..." THIS is much more in depth and complex. I am definitely trying this right away! I'm going to your website right now.

+tracey martin One of my favorite recipes with shrimp paste is a nice and simple "Shrimp Paste Fried Rice". Also, you might want to try a "Red Curry" dish, shrimp paste pairs well with red curry.
I really like simple baked tofu with this sauce and rice! its one of my fave foods. its good for dipping summer rolls into (the raw rice paper wraps with rice noodles, tofu, and thai basil etc. filling.)
was disappointed by the peanut salad dressing that was store purchased and then watched this ! you can see this is the real thing.. makes me miss Thailand...

you can use green curry paste, red curry paste, Panang curry paste, yellow curry paste, or vindaloo paste. Each of these pastes has a similar flavor profile to Massaman curry paste

You can also try jaggery from an Indian grocery store instead of brown sugar.

It never last very long in my house, usually gone the same day i make it. But it can last several weeks in the fridge and even longer in the freezer.

It doesn’t last all that long in the fridge, it’ll start to mold after a week or so. I divided mine into portions and froze it : )

Ive no idea where to get tamarind juice from? Not familiar with it, only the paste...
Paste will work too. Also, if you have fresh tamarind, just soak in warm water for a few minutes and then squeeze.
