- A dessert (pudding) so simple and yet so delicious it graces the tables of many British homes including Royalty. The perfect end to a British Sunday roast dinner. Blackberry and Apple Crumble with Custard.
I learn't to cook this dish as a young boy under the watchful eye of my mother and went on to prepare it for Royal lunch at Balmoral Castle, Windsor Castle and Sandringham. Everyone has their favorite crumble; apple, raspberry, rhubarb and Prince Charles favorite pear and banana but all agree the topping has to be custard and/or cream. Absolutely delicious!

Blackberry and Apple Crumble with Custard
Makes 6-8 portions
4 cups blackberries
2 cups apples, peeled and thinly sliced
¼ - ½ cup sugar
1 TBS cornstarch
For the crumble;
2 cups flour
1 cup unsalted butter, room temperature
½ cup sugar
For the vanilla crème anglaise;
1 cup milk
1 cup heavy cream
6 egg yolks
vanilla bean extract
¼ cup sugar
Toss the blackberries, apples, sugar and cornstarch in a large bowl and pour into a casserole dish.
In a large bowl add the flour, sugar and butter and rub together to make fine crumbs. Spread evenly over the fruit.
Bake at 350 degrees F. for 30-40 minutes until the fruit is tender and the crumble is golden on top. Set aside to cool.
Prepare the crème anglaise, bring the milk and cream to a boil in a heavy based pot. Whisk the egg yolks, vanilla and sugar until combined in a large bowl.
Pour the boiling milk on to the egg mix and whisk until smooth. Return the mix to the pot and place back on the heat. Stir until the mix has the consistency of heavy cream. - Розваги

My English mum put rolled oats and brown sugar into the crumble mix.
My American mom did the same.
I'm from Northern England and we did the same. I've been a Canadian for more than 50 years but still make crumble that way. 😊

I grew up in Surrey. My mother never used oatmeal. Neither do I.
I turn my fruit pies into "crumbles" when I mess up my pie dough. 😆 No one knows it was a mistake! Thank you for the *intentional* recipe!

My grandmother would take us strawberry picking every summer when I was a kid. We wore bucket hats and had a bucket, walking up and down the rows of strawberries. 🍓 I’ve only gone blueberry picking once but I remember getting lost in the tall vines. Such good times. 😀
I used to pick blackberries with my Nana as a child in Tyneside over 65 years ago. They grew everywhere in the hedgerows, as well as back gardens, and we all loved them in pies or crumbles. It was such a treat, and as they were free nobody would dream of turning down a blackberry anything. Happy days. 😊

I learned to make apricot crumble at school in the 80s here in Australia. We served it with vanilla ice cream. It still is one of my favourite desserts.
That sounds sooo good. Never seen it here in the USA. Is the recipe you followed like this one with apricots instead of blackberries and apples? This would be great for church potlucks.

I'm with you on the rhubarb crumble, and so is my family. I grow my own rhubarb. I moved recently and had to leave several gigantic rhubarb plants behind. I was very sad, but will be putting in more in my new garden. And I will surely try this blackberry concoction!

We call this Cobbler or Berry Crispy in South Georgia 🇺🇸
One of my Mom's cookbooks also gave histories for many recipes. I recall one for a crumble that was from a cookbook from the late 1700's. So it has been around for awhile along w/Brown Betty, Pan Dowdy, & several others (at least in the USA).
We often frequently call them a Crisp or Brown Betty here in Canada. (Example: berry crisp, pear crisp, apple Brown Betty etc)

It’s always interesting to see how similar British cuisine is to southern cuisine. This dish would feel right at home on any dinner table in the south.
I always heard for the US that crumble is northern and cobbler is southern. Though I grew up in PA and we ate both.
I crumble up shortbread biscuits as my crumble. My mother also added a digestive biscuit to the shortbread mixture.

My grandmother made the the best rhubarb crumble I ever tasted ,,,,,,, she grew it in her garden, and she always made it for me , I can’t make it taste as good as hers did..... it’s one of my strongest memories of her . Miss her ,,,,,,,,, watching from Buckinghamshire 🇬🇧

Chef McGrady this pudding looks so good especially with real milk/cream custard. I made a jumbled berry crumble last evening and used chopped walnuts and sunflower seeds plus a little bit of oat flakes in crumble mixture. It gave the pudding a little extra crunch ... Delicious!
Delicious and can only be improved by making a pie, and having the crumble as the topping. Served with quality vanilla icecream and cream
I'm totally with you on this one, Darren. A crumble without crumbs? Those nuggets are the best part! Why don't we all just pack it in and give up on life, since apparently nothing matters anymore? A crumble without crumbs... Joyless monsters!
I'm not going to lie, if I dared to try to make this delectable thing, I fear even my pet rabbit would go after it!
On a serious note, I would love to experiment and try to pull off a rabbit-friendly little dessert. Rabbits can't have citrus but if one is careful, they can have a bit of cream/milk.

Blackberry crumble brings back so many Autumn memories when my mom was still alive. I like to pick the blackberries myself and then make the crumble. Or apple crumble with custard. Best served warm with vanilla custard. But it only tastes when its Autumn - summer temperatures are to hot for this delicious dessert. I also like to make it for Christmas since it can be well prepared in advance.

Just baked this Darren. I added Xylitol sweetener to the cooked Birds custard in order to try to reduce Sugar consumption! It's such an easy and quick pudding to create, as well as being delicious and warming as we are now in the Autumnal season in the UK. I bought the famous Royal Doulton, "Carlyle" dark green with gold pattern, when I was 19 y.o....I'm 70 now, and this dessert is worthy of such beautiful china. I have never eaten this, but blackberries have to be sublime, with that custard. -- Ft. Worth, TX

Hello Chef Darren, growing up in the Midwest part of the US we had rhubarb crumble, but I love all the fruit crumbles much better. I must try yours, it looks yummy.

I normally serve the crumble with a couple of scoops of vanilla ice cream.
Rose Levy Beranbaum, who wrote The Cake Bible, suggested using a high quality melted vanilla ice cream as sauce for cakes and pies.

I’m diabetic so rarely have desserts, but I do love a home made crumble made with locally foraged blackberries, so much so that I’m very happy to enjoy a hearty-ish apple and blackberry crumble. Or a home made tarte tatin, served with custard. 🤤
You could use a ground almonds/coconut flour instead of wheat flour. It takes a bit of experimentation to get the quantities right but it's worth the effort, but always butter, never margerine. Also, I use a few eating apples and one baking apple and no sugar, as I try to eat a low carb diet. Looking at what he uses for his custard I'd use half and half if I was in the USA :D
