    I made a small one yesterday with plums and my daughter begged me to make some more for when she returns home tomorrow! She loves this recipe as much as I do, John! So I have another big apple and plum crumble in the oven right now! John, you are a superstar and very popular in this household!

    Wonderful:
    Apple and Blueberry /Blackberry Crumble
    Needed 150 gm/5 oz Berries for adding
    Prepare 2 1/2 lb Apples coat & add lemon juice
    Add 200 Gm /7 OZ Plain or AP Flour to
    125gm /4 ½ oz Demara or white sugar then add
    50 gm /2 oz Oatmeal then
    Mix with hands to breadcrumb consistency
    125gm /4 ½ oz butter in cubes then and 2 spices
    ½ tsp cinnamon and ½ tsp Nutmeg
    Preheat oven to 180C/350F
    Melt 50 oz Granulated Sugar in frying pan
    Add prepared apples to pan t and caramelize
    then add lemon zest and 1 tsp Cinnamon
    Finally add 50 gm/2 oz butter and cook 3 to 4 minutes
    Add to baking pan and then add berries I used blueberries
    Time it for 30 minutes

    I can only assume that you are absolutely sick of hearing this, but... you have the most amazing talent, perception of what people need for successful home baking, ability to communicate/connect and instruct, and, OMG!, THE MOST SOOTHING VOICE! I can honestly say that I think I have watched every one of your vids at least twice. You, sir, are awesome! If I could afford a trip to England, or wherever you are currently living in retirement, I would fly there, give you a VERY big hug and kiss on the cheek and then fly back to the U.S. Don't worry, I am not a stalker, not gay and can't afford the ticket being a humble, old, country farmer/gardener. If you only had a clue about how much you have inspired me and taught me some culture, techniques and baking confidence... I have become famous here! Well, at least with my family, friends and immediate neighbors. Please, please, please keep up the outstanding work. I wish everyone would use the current technology (UA-cam, Google, etc.) for the "greater good" in the manor you use it. I sincerely wish you well in everything you do with your retirement and wish you many, many healthy, vibrant years!

    I have been watching your videos and really appreciate them but there's one thing in particular that I appreciate... You use all of your ingredients. I mean, you make sure the containers you use are cleaned out. Like scraping bowls and not leaving part of some ingredient still in the cup or not cleaning the bowl of the mixed product into a pan. It's just like home. No wasting of food or show of disregard for the whole reason we're in the kitchen - we love what we do and we do it well and tidy. Thank you!

    Perfect desert for Sunday lunch! We just made one and it was an enormous success - served with ice cream now that the weather is warmer. We all love the crumble topping, so added 10% to the recipe quantity. Thanks John for another great video.

      My pleasure John. I actually am hooked into all of the above and have been for some time. I look forward to the recipes and have especially been a really big fan of your bread recipes. Since first trying the home made baguette recipe, I have more or less used the stretch and fold method for most breads. Although I have made bread for years utilizing the rise up and punch down method, I have found that the stretch and fold method is far superior and lets you really see when the dough is actually ready to pan, proof and bake. Just keep doing what you are doing, I can't imagine that your following will not increase and be much appreciated by others.

    This looks amazing! I think it will also solve another problem I have in apple pies that aren’t turning out with the apples soft enough to suit my husband. He will enjoy the tender fruit.

    English Bramley apples for me, every time, John. I love the tartness.

      The only thing I use Bramleys for Nees is applesauce, besides being way too expensive, if you tried this recipe with Bramleys you'll end up with the frying pan full of mush in 2 minutes, they are way too soft and tender for this caramelizing process.

      John Kirkwood "...ah well, Bramleys don't need so much cooking so I wouldn't pre-cook them. Also, I don't add sugar or butter to the filling of my crumbles. I let the Bramleys speak for themselves. Nothing against your recipe, John. It's always interesting to see how others cook. I'm certain that your's is delicious. So is mine! :-)

    Thx for another lovely video John. I've done all sorts of crumble over the years but never seen it done like this before, apples or topping but it looks great. Got my apples and going to try it this weekend. I usually use Bramley's, mix in sugar, spices and microwave and never used oats in the topping.

      I've never Caramelised my apples before. My mum used to cook apples for apple pie this way with cloves and cinnamon and I’ve always done it the same. I also make the pie with self-raising flour, sugar, butter, eggs and a little milk and vanilla so it’s more cake than pastry. It’s a family favourite and friends in UK and Cyprus love it. Not sure where the recipe originated from. My next door neighbours don’t like it at all though, my first YUK.

    I love this recipe, as there are only two of us, I make the topping and it will make four small crumbles, I have found that the topping keeps well in a storage box in the fridge. Really handy when we find some fruit in the garden and need a topping. Used it the other day on a couple of ripe bananas and some chopped up dried apricots. Really quite tasty.

    Hi John. Love your recipes, particularly the steak pie. Going to try this as brambles are looking ready for picking. My wife likes rhubarb so we'll try that too, but in my mind, rhubarb is quite hard, so would we need to cook the rhubarb off first? Also, could we make more caramel at the start with the sugar so that the apples were more toffee-like or would that not work? Also, i prefer thicker topping, and for it to be a bit darker... would it just be a case of making more and leaving it in the oven longer? Thank you!

    I am actually making tomorrow for our desert crumble but not adding BlackBerrys as I had apple 🍏 blackberry pie other day .your crumble is magnificent so I’m going to follow your guid to make this but will leave out the oats though.Happy days John. Have you made on here carrot 🥕 cake as I looked but couldn’t find it.I’m sure if you do it’s wonderful cake to make here myself 👍🏻😊

    Warms the tummy and the heart! John, is the northeast of England known as the Yorkshire Dales? I have been an avid reader of James Herriot's books depicting life in 1930s , and many of the meals he enjoyed while in attendance at various Yorkshire farms bear a resemblance to your style of cookery.

    I beg to differ John, but apple crumble originated in Britain during WW2 due to rationing, either way it looked good, I like apple, rhubarb and ginger crumble which I make for Sunday lunch with custard on winter and ice cream in summer yum!

      According to my sources, it became popular during WW2, to make the sugar go further, but it was being made way back in the 20s, and probably earlier.

    Just a fun fact, a crisp is what you made. Add oatmeal to the topping and then it’s a crisp without is a crumble. My personal preference is a crisp. I just like the added texture/crunch :)

    Is it best to freeze the apple pie or apple crumble before cooking or after cooking or doesn’t matter

    All I can tell you sir, Is your recipes are wonderful. Made three of them all came out perfect. I sent the apple pie recipe to my daughter. Working on getting my sourdough starter so far last day working great.
    Now here’s my question I do not like BlackBerries can you use some other kind of fruit. Your help is much appreciated. Hello from Texas

    I love Apple or rhubarb crumble John 😍😍😍😍 I don't enjoy raspberries or black berries because of the big seeds that crunch and get stuck in my teeth. Mum used to go to the local co-op and is say don't buy puppy jam please and she would buy bramble seedless for me 👍

    Hi John, when you say that "any sweet eating apple will do" does that mean Bramleys are out? I thought Bramleys were the go-to for Apple Crumble / Pie - and I've seen other recipes for apple crumble that advocate for half Bramely, half Pink Lady etc. Can you tell me whether I should avoid Bramelys for your recipe? If so, is a mix of half Braeburn, half Pink Lady OK? Thank you in advance, I've high hopes for this one!

      You can use Bramley if wish for a sourer taste. My son also a chef loves to only use Bramley with some sugar.
