      @@miariva706 Is not dry. I wonder if you over cooked it. This cake is never dry. I would suggest you to try and do it again. Make sure that you use good quality almond flour. I have made this many times and is one of my friends favorite cake.

    Looks nice and yummy! If you could put all of the ingredients under the videos instead of redirecting to open another website, that will be much better and convenient. Btw, is it necessary to wear gloves at home cooking?

    Ms. Edna, you are positively tha’ Queen 💣💥💥!!!!
    I made this yesterday along with the matching icing for a friend for Mother’s Day and it is ABSOlutely....delicious!!!
    I lie not about this here.
    I am an experienced at home baker and while I’ve baked a few gluten-free and vegan cakes...never a low-sugar/sugar-free cake.
    I was a tad worried when I actually tasted the ‘Swerve’ as it had that ‘cold, icy weird’ taste but in the finished product-OUTSTANDING!!!!
    And spreading that icing was like...like a dream-I felt like I was in a dang ‘frosting’ commercial. My crank spatula gliding through that icing.
    I WISH ABC...spread as smooth and creamy as that.
    The ‘Swerve’ in the icing was just PERFECT...in taste. I had never heard of this substitute until I had watched this video a while back.
    I SURE HOPE...you have or are working on a vanilla/white version and it would be nice for you to come up with a ‘Red Velvet’.
    Honestly, I don’t wanna try anyone else’s recipe in this area concerning ‘sugar-free’ cakes.
    After tasting this here Carrot Cake (which my friend absolutely LOVED)...I like to stay where I know it’s done right to provide the best taste, texture and height.
    Yeah...you did that girl.🔥🔥🔥🔥

      I did the chocolate cake recipe and the buttercream for it. I do agree with the aftercooling effect of the swerve but it's the only one that doesn't make the icing grainy. To avoid the "cooling" effect, I don't add a lot of buttercream. It's more like a naked style type of cake. That gives you the flavor and is not as bad with the cooling effect. Then again, I feel that it makes you eat less, so I see the positive side too..lol

      Well, I’m here to tell you that I put it on as a ‘regular’ icing i.e it was NOT a ‘naked effect’-and that icing is THE 💣💥💥!!
      It doesn’t have that ‘icy cool’ feel or taste.
      I could even use that on my regular 🥕 cake
      its so darn good.
      I’m just waiting for the creation from you of a Vanilla and Red Velvet.

      No, I think you were misunderstanding me Ms. Edna-I used the ‘Swerve’. And the whole recipe using the ‘Swerve’-was spectacular.
      👏🏽👏🏽👏🏽👏🏽. I will continue to use the Swerve.
      I followed your recipe to the ‘T’ Edna.
      I was just glad that the “cooling” effect taste-isn’t noticeable in the completed cake. It is delicious!
      I wouldn’t know this was a sugar-free cake.
      It taste just that good and for this reason-I will continue using the ‘Swerve’. ❤️

    Hi Edna. I want to make cake for my daughter in laws birthday next week. It not clear to me is this 2 or 4 cake layers? Do i need 4 cake pans as the batter will fill 4 cake plans? Please advise ASAP so i can proceed. Im a single with no circular cakes so i need to know to buy 2 or 4. The picture shows 4 layers, the recipe says 2 cake pans. You know a guy can get quite confused in the kitchen. Maybe I should cook in the garage, LOL.

      The recipe will be the same, you change pans. If you want a taller cake then you will have to double the recipe.

      My original carrot cake recipe has pineapple but it was the full sugar recipe. This one is low-carb and has no sugar and pineapples have a lot of sugar in them. Adding the pineapple would not make the low sugar.

      I would not use Splenda on a low carb diet! This recipe is for is for people watching their sugar intake!

      Splenda is actually a bad sugar. Even though they say is low sugar it's not a good one. It raises the insulin level and it can be just as bad. You need to use low sugar substitutes that are safe and don't raise your insulin. There are a few in the market so you can choose which one you like best. I like Swerve, Monk Fruit, and Truvia(bit make sure to use the one that doesn't have sugar in it) Erythritol is an alcohol sugar that doesn't raise insulin and Stevia is good. Read labels and if you want to know more about the subject, do research on the best sugars to use in a keto that doesn't raise insulin levels.

      Try monk fruit or allulose. Some stevia's are ok but some can be bitter depending on the company.

      La piña en syrup no la recomiendo. Contiene azucar y podria afectar la consistencia del bizcocho, Los huevos grandes deben funcionar en esta receta.

      A six-inch cake usually serves around 12 people. I haven't sat down and done the calorie count per slice.

      The brown sugar I used is Swerve and it's sugar-free. It adds flavor. If you decide to not use it, you need to make sure to exchange it for Swerve sugar so you don't get a bland cake.

      I never give an exact amount because this can change between the cake pan used and even the oven. I would say to start checking on the cake around 35 minutes. I used a 6-inch pan and it took around 40.

      Not on this one but if you want to use regular flour, I have a Carrot Cake recipe on the channel that is really delicious. You can exchange the sugar for Swerve for a lower sugar recipe but remember that flour is a carb that can convert to sugars.

    My batter came out heavy and dry and I used the same ingredients and amount, what did I do wrong, I copied step by step

      Make sure your measure cups are the proper ones. If you are using something like coffee cups or something else, the measurements will be off and you won't have the same results. Also, make sure everything is leveled. I have a tutorial on baking tips that can help. There's always a chance that maybe you added more than the recipe called.(human mistake), it happens to even me. I would say to try and use the proper tools and do it again. Make sure the ingredients you are using are the correct ones and double-check it wasn't just a mistake on your side. This recipe I make all the time and it's super moist.

      Remember it's a small amount of carrots for a whole cake. Carrots are ok for diabetic people in small amounts. Raw carrots have a GI of 16. The GI for boiled carrots ranges from 32 to 49. That puts carrots in the low glycemic food group:
      Low glycemic index: 1-55
      Medium glycemic index: 56-69
      High glycemic index: 70 or higher
      The glycemic index for any food will go up if you cook or prepare them with honey or other carbohydrates. Still, carrots are high in fiber, so that helps slow down how quickly they release the sugar. They also have a lower glycemic index than other root vegetables like potatoes.

      I am thinking you did something wrong when adding the ingredients. Try again. This cake comes out perfect every time. Watch the video and try again. Sometimes we make mistakes, forget an ingredient or even add too much of it without notice. Make sure you are using the right proper measuring tools too.

      @@desireejohn8545 That will depend on the size pan you use and how much batter you add to it. I usually start checking around 35 minutes for the pan I used, which was 6 inches by 3.

    I followed the recipe to the tee and it tasted like unsweetened cornbread and even cut baking time. Swerve does not sweeten. In the icing I used more than called for and still not sweet and I am a person who does not like overly sweet desserts.

      I am not sure why that is but I love sweets and I get asked this recipe a lot. You can always add more sugar. Also, make sure you are using super fine almond flour.

    This new type of sugar is highly processed and there is little research on them. Nobody knows the effect of them long term

      Compared to what is out there, at least there are no insulin spikes from it. But like everything these days, a lot of things are super processed. Time will tell. At least this is a better option for when we want to eat something sweet.

      One stick of butter is for a whole cake. And yes, some diets do use fat as part of their diet. Keto is one of them.
