Two days were so worth the wait. I thought you were overreacting about the pork, until I tried it. I may have yelled at my husband, then he tried it and he freaked out too. We made homemade pan cubano, not as fluffy as the local Cuban joint, but it tasted amazing.
This recipe has been my favorite since I saw it on here. Really took me back to my days in Key West with family and it's a hit every year when I make it for the holidays. Can't thank you enough Babish!

I was very confused about the pork before I remembered my mom uses leftover pernil to make her cubanos and this is what babish was making. Cubanos are the absolute best, and I highly recommend making some pork shoulder/pernil for your family or a party on an occassion such as Christmas so you can have leftover pernil for Cubanos! Family tradition of mine that I'll likely pass on to my kids

12 hours of waiting, the work is minimal. I'm trying it out and the brine took all of 10 minutes mostly because I don't have a garlic crusher. Then it's just waiting, make a quick marinade, baste, and then more waiting. Total work is closer to like 30 minutes. Just lots of waiting.

We Cubans do it differently: (just for the pork though, we don't have Cuban sandwiches in Cuba, Medianoche yes, cubanos no) Mojo: Sour Orange, Cumin, Salt, GARLIC (lots). Pork: Stab the devil out of it, and get the mojo in the crevices. Leave overnight. Start cooking at around noon and enjoy your pork by 9pm or something like that :)

We Cubans do it differently: (just for the pork though, we don't have Cuban sandwiches in Cuba, Medianoche yes, cubanos no)
Mojo:
Sour Orange, Cumin, Salt, GARLIC (lots).
Pork:
Stab the devil out of it, and get the mojo in the crevices.
Leave overnight.
Start cooking at around noon and enjoy your pork by 9pm or something like that :)

I completely agree that its much smoother, but the song kind of worked for branding. I nice way to start off with getting back to that feeling of a BWB video. That being said, i didnt even notice it was missing from this video until it was pointed out soooooooo *shrug*
