      Well, he used a temperature probe to ensure the inside was exactly the right temperature. Since the chemical properties of solid beef are fairly constant, then knowledge of the internal temperature and external browning would be enough to determine if it is cooked correctly or not. That's why we use temperature probes, they let us acquire knowledge that would be much more difficult or tedious to know otherwise. If you were going by time alone, then this would be a gamble, but the probe makes it more like playing poker with the ability to see everyone's hand.

    I just made this... well technically I just ate this, (The Beef wellington) and now I'm FULL. Being somewhat tight on cash at the moment though, I used a flank steak, followed all the steps, cooked it as pink as possible, cut it up into 3 strips and rolled those into the roll. Worked really good.
    -I just wanted to say thank you for giving us ideas to make these exciting dishes and giving us the courage to try out new ideas.

    Tip for puff: always roll in the same direction. This keeps the butter layers even and together and results in awesome puffs and layering.

      This is a totally different concept. Searing meat doesn't "seal in the juices" because, when you sear a piece of meat, you're already losing juice. Heat + water = steam, ofc. It's been proven that seared meat has less juice than raw meat.

    -I used Babish and Ramsay’s videos to make my own Beef Wellington and these are the things I wished I knew before hand:
    -Get the widest damn Saran Wrap you can find. The thing where you twist it in the air is not easy, but made easier by really overdoing the plastic wrap. If you can’t find especially wide stuff then be sure to press some of the normal 15 inch stuff together.

    Pretty crazy seeing the channel grow up so fast! I've been here since Louis C.K chicken. One thing I noticed was the scrambled eggs intro is gone and the music that would play while you were cooking. But the show is still satisfying to watch without it. Keep up the great work man!

      Actually it isn't unhealthy, quite the opposite, overcooked steak is less healthy as it destroys a lot of the nutrients, which means consuming it provides your body with less it can absorb and more waste the body has to process out of you.
      Color is a poor indicator for the safety of a meat, temperature is what is used to judge safety.
      For a properly handled piece of fairly fresh beef an internal temperature of 120 will be completely safe, as bacteria won't have been able to penetrate the meat much, and when the center is 120 the outer parts will naturally be quite a bit higher, specifically passing the 155 degree needed to kill e coli for example.
      To bring some facts: Safety regulations for whole meats like beef is 145 degree center, but then you might ask why 120 is safe, this is because 145 has to take into account less than properly handled meat, and that it might be nearing the end part of its expiration date, both of these mean bacteria can penetrate deeper in the meat.
      Even so, 145 degree which is what the safety regulations call for, is still medium rare, which still means pink color.

      Almost but not really, the main difference is in the cream used.
      A Mille-feuilles is puff pastry with crème patissière and icing.
      A Napoléon is puff pastry with crème mousseline (crème patissière "lighted" with butter) and crumbles on top and on the side.
      Here it is a mix between a mille-feuilles and a Napoléon as he used a crème mousseline and icing.
