    BURRITO LETTUCE CUPS
    Ingredients
    1 purple onion finely chopped
    2 cloves of garlic finely chopped
    1 bunch of kale finely shredded
    2 large orange sweet potato grated
    8 zucchini
    1 red capsicum chopped
    6 ripe tomato's chopped or one can of chopped tomato's
    1/2 to 1 packet of burrito seasoning mix (check for no oil or sugar)
    Or mix 2 Tbs of, cumin, smoked paprika, onion powder.
    1 tbs of dried coriander and mixed herbs.
    1 tablespoon of vegetable stock
    3 tablespoons of sugar free tomato ketchup (You could also use tomato paste and adjust the seasonings to taste.)
    1 can of kidney beans
    1 can of pinto beans
    1 can of black beans
    1 cup of cooked rice or quinoa.
    Steps
    Sauté the onion, garlic and kale together until the onion is soft and the kale is wilted.
    Use a little bit of water and keep adding more if needed. You will find a video about cooking without oil on my IG.
    Next add in the grated sweet potato, courgette, capsicum and tomato. Place the lid on top and sauté on a medium heat until the vegetables have softened. You will need to stir frequently.
    Normally there is enough water in the vegetables to stop them sticking, but if you find the bottom is starting to burn reduce the heat slightly and add a little water.
    While the vegetables are cooking add in the spices, vegetable stock and ketchup.
    You can also add in chili powder if you like it hot.
    Once the mixture is cooked add in the beans and rice.
    Simmer for about 10-15 minutes with the lid on until mixture has reduced a little and flavors have developed. Test and season to taste.
    To serve I like adding chopped tomato, (or tomato salsa if I’m not in a hurry), hummus, a tiny bit of avocado and lots of lime and coriander.

    Oh my goodness this is so weird Chelsea! I am a New Zealander who has been vegan for over 10 years following Dr Mcdougalls Starch solution which I came across through research due to having MS myself! I've just discovered you through Plantiful Kiki and Highcarb Hannah as I started putting on weight and you have helped me revisit calorie density. Please tell Nick I was diagnosed with MS in 2001 with relapsing remitting but within a few short years it progressed to secondary progressive . Recently I had an MRI to see what's happening and all my plaques are inactive and I can only put that down to plantbased eating so keep at it!

      Oh my goodness!!! Congratulations on your health improvements! I have some serious health challenges myself and in my family and we've been hoping going plant-based would help us. It has definitely made a difference but still have a long way to go. So, it's SO nice to hear your story. Thank you for sharing.

    I'm not unable to lose weight, I'm just unwilling to eat more vegetables. I needed to hear that. Great show and recipes! Chelsea is wonderful.

    Chef AJ - Chelsea is truly your mini me - love sweet potatoes and broccoli, doesn’t like quinoa, eats the same amounts of veggies and starch, doesn’t eat nuts or avocados, etc. It sure would be great if she could visit you! I plan to listen to her podcast. I started WFPB after your Summit in February and absolutely have never been happier with my diet!

    Food looks so good. I really liked how she suggested to use lettuce rather than a wrap. It's a simple swap that will make a big difference for me.... Her dress is too cute! ❤️ I'm glad the sound issues got worked out.

    Ahaha, someone commented Chelsea is a Chef AJ mini me just after I typed it! Chelsea is so straight forward. Her fridge is full of chopped broccoli. Ahahah, then Chelsea shows her boxes of broccoli. And like Chef AJ, potatoes are her favourite too 🍠🥔

    I didn’t know I can eat this much veggies, I been vegan for three weeks now. I tried burritos is the best I added carrot. I couldn’t find taco seasoning without salt . I love this recipe and I will make it every week. Thank you for making for us. I will follow calorie density you explained well.

    So how does the calorie density equation workout when you are working all day on your feet moving a lot and you only have time to eat one meal that day? Then I would think having something like this and adding the tortilla with avo and all that would be okay because you would want to extra calories as fuel..is this right?

    Super video! I've only just discovered Chelsea. She's fantastic. If anyone wants a little mayonnaise on their burrito, Anja Cass at Cooking with Plants has a super recipe for mayo made with potatoes! Almost no fat and low in calories.

    Hey Chelsea, I just have to ask... I'm a mum of 2 kids and a hubby, so with 4 people in the house, having enough space in the fridge to fit all the vegetables for all of us is challenging. How do you manage your fridge so that you have space for 4 heads of broccoli per person per day? Do you shop 4 times a week or something? Your fridge looks like it's a relatively normal size...

    Dr. Terry Wahls is a physician who has dramatically slowed the progression of her MS. She’s someone who’s been working to not only bring past research into her methodology, but creating new research studies around food as medicine at her university in Iowa
    .

      Have looked into her protocol, all keto and not consistent with other studies.

      @@ChelseaMae Yes, but she has reversed her progressive MS and is in remission. She is a scientist and a Medical Doctor who has been granted millions of dollars from the National Institute of Health to continue her research and has helped many people go into remission. Also, the Keto diet is an anti inflamatory diet that helps to control inflamatory conditions such as MS and other neurological conditions. What studies is she not consistent with?

      Also, just wanted to mention that she was a Vegan for many years which led to her Progress MS. The plant based diet is a clean and healthy diet but it is not effective for any neurological conditions. Starches and carbs turn into sugar in the body which ultimately causes inflamation which leads to cancer, diabetes and nuerological conditions.

      Jill Marie Smith Not consistent with the biggest studies done on diet and ms progression that follow thousands over 30+ years as opposed to one person which lacks statistical significance.
      Check out swank diet.
      There’s just so much wrong with keto I can’t even start.

      @@ChelseaMae I suggest you check out Dominick Dagastino - Thomas Seyfried and Dale Bredesen work who have have over 40 years collectively on the benefits of a low carbohyrdate diet. The highest causes of mortality from the Covid 19 was due to the high carbohydrate diets which leads to diabetes and hypertension. In all cases the people with high blood sugar and hypertension died from the virus.

      Where on earth are you getting your broccoli? Broccoli in the southeast United States is usually around $1 per pound!
