  • THE BEST BOUILLON/BOUYON VEGETABLE STEW GIVES STRENGTH VERY NUTRITIOUS HAITIAN DISH
    INGREDIENTS
    3lbs of goat
    2lbs of oxtail
    2 sour oranges
    2 limes
    Parsley
    Thyme
    1/4 cup of oil
    3 green plantains (cut up)
    Yellow yams (cut up)
    3 potatoes ( cut up)
    1 taro roots (cut up)
    1 large carrot (cut up)
    1 cup and 1/4 cup of epis
    1 cube of Maggie
    Bonnet pepper
    Cloves
    BOY (dumplings) INGREDIENTS
    1 cup and 1/2 cup of water
    1 teaspoon and 1/4 teaspoons of salt
    4 teaspoon of vegetable oil
    4 cups of all purpose flour
    Soup
    170 oz (21 cups of water)
    1 tablespoons and 1/4 teaspoon of salt
    2 cube of Maggie (chicken flavored bouillon)
    5oz of spinach
    3 tablespoon of butter
    INSTRUCTIONS
    Clean your meat as seen in the video. After your meat is clean sanitize it with lime juice, vinegar and sour oranges, I added som parsley and 1/2 of a cut up bonnet pepper to my sanitizing mixture but that’s optional. Let the meat sit in the sanitizing mixture for about 10 to 15 minutes. After 15 minutes, rinse out the sanitizer mixture out of the meat as seen in the video.
    In a kettle or big pot add water parsley and a half of a lime put the kettle at high heat, and let the water boil once the water is boiling pour it over the meats. Mix well to make sure all of the meat get some of that hot water. Let sit for five minutes, then rinse out the water
    In the pot that you’re going to be making the soup in add 1 and 1/4 cup of a epis, 1 whole squeezed lime (2 tablespoons of lime juice) 1 cube of maggie, 2 teaspoons of oil, and add the meat mix well to be sure the meat is well marinated.
    Put the pot on the stove at high heat 8/7 and let the meat cook for one hour covered (check on it and mix it occasionally). After 1 hour of cooking add 170oz (21 cups of water)
    Let the water boil for about 30 minutes than add 1 tablespoons and 1/4 teaspoon of salt, 2 cubes of Maggie, parsley and thyme tied together, one bonnet, pepper pierced with cloves and 4 tablespoons of sour orange juice to the water let water boil for 5 minutes.
    Next add cut up spinach and carrots let cook for 15 minutes add cut up plantains and add 3 tablespoons of butter let cook for 15 minutes add potatoes, yellow yams, and taro roots let cook for 10 minutes add boy (dumplings) let it cook for 1 more hour and turn off heat
    Total cook time 3 hours and 15 minutes

    Thanks for making this video. For nutrition purposes though you added the spinach to early because cooking spinach that long depletes the nutrients when it changes from green to almost black. I would suggest you add it larer on the same time as the pototoes

    I hated bouillon as a kid. And I still do somewhat as an adult.
