I use a small rubbermaid tote . I make bird cones out of gatorade bottles and screw them to the sides of 2x4s . I grab the butcher scissors and cut the heads off and place them in the bird cones to bleed out . I do 20 at a time . After 20 are in cones , I start skinning and processing the first bird . It takes around 2 minutes a bird when process is complete . I butcher about 100-150 every 2 weeks ..
For people who dont know what to use the leg and back for, you can make a really good game stock. Keep all you leg and back, try to have atleast 2 pound. Put them all on a sheet pan with some sliced onion, carot and leek and broil them until nice and brown but NOT BURNED. Had them to a pot of boiling water and boil it for a good 3-4 hours or more if you can. Strain it through a fine mesh strainer and Let cool over night in the fridge. Next morning remove all the fat from the top and reduce it atleast by half for broth and by 4 to get stock. Poor it in ice cube and freeze it than place it in a ziplock. Perfect to make sauce, stew, pot pie... I usually mix quail legs and backs with rabbit backs to make it. If you want it to be a bit more gelatinous just had a small pork knuckle or turkey wings.
That is a good idea. I make lots of stock from chicken and turkey so I have more than i need on hand usually. But that is a good use for them for sure.
I do not throw the legs out. Mine have been fairly meaty so far with nearly as much meat as a chicken wings and tastes better. Also, I clip the the wings at the second joint and filet the breast. The breast bones and wings are then bagged and frozen. When we make quail soup, we boil the meat off of the bones and make a really good stock for quail noodle soup. The breast and legs are BBQ goodness. By the way, I'm still getting about nine eggs per day out of eleven hens without artificial lighting.
Sounds like you are doing a great job. I did end up keeping the legs on these and I usually do. but I didn't want people to feel bad if they decided to not keep them. Good luck in the drawing.
Save up the legs, when they get 50 or more do sweet and spicy stir fry with them. Done right you will be glad you saved them. Oh and they cook in seconds. Damn good 😊
It isn't difficult to do really. At least not physically difficult. But it also isn't fun to do and takes a little bit of mental preparation and the right mind set.
Essentially Kimberly If you raise them well and give them a good life, they only have one bad day. Give thanks for their lives and them feeding your family, and don’t waste the meat, and it will be okay. Thanks for blocking out that sensitive part, but still being precise on how to do it! Where I live (Sweden) it is mandatory to knock them out first. Did 1 of mine this morning i kept the Legs. Look, the build-up was the worst bit in my head, when i just got to work its not much different from cleaning a fish. Less blood in fact. I took my second male out as he 2/3rd the size he should be and was causing drama in my flock. I will eat him tonight. Its not as bad as you think. They are livestock not pets to me.
Hold it's neck with an axe. Then hit the axe with a small hammer. It's fast and the blood it's released instantly. Of course the bird can't feel anything.

Hey SLIGHTLY REDNECKED! I got into the quail hobby from watching you. My parents are finally getting me some quail but, I WOULD LOVE TO WIN A 100 eggs! Thank you so much YOU ROCK!
Thank you for cutting out the slaughter of the birds . I have to ask you what is your opinion on the videos I have seen of people ripping the head off in one hard pull ? It looks like there's about as much meat on the legs as there is on frog legs. Of course I am of the waste not want not old school. And the life of the bird is worth at least all I can use of it. But that's just me. Live and let live.
I think there is a little more meat on frog legs but not much. I do generally keep the legs myself too. Sometimes I am in a hurry though and just let them go.
It gets people so disconnected from reality when you cant show the animal being butchered from start to finish its such a shame that youtube wont allow it nice job on the butchering
I'm back into the quail breeding after moving. I dip them in scalding water, feathers practically wipe off, but I like your fast skinning method. Love your channel, I learn so much. I will need new quail blood soon. Thanks for hatch info! I want those eggs from that contest!
6 Months ago I ventured into the quail raising for meat and eggs. I watched many of your videos and even made my quail hutch from your design. The 1st one I thought I would up you one and make my doors bigger. Well to my surprise I see why you made the doors less height-wise. Bob White likes to fly freely. The good news is after losing one. I waited patiently till night and got her back as she roosted on top of the hutch. Later I made another and shortened the height of the door and makes it much easier for them. I then made a smaller door inside of the larger door for the other. Sometimes lessons are learned and reinventing the wheel is not always best. My next batch will be some pharoahs. Any suggestion? ATB Mike and thank you for all your videos they have helped me tremendously. Chickens and quail lay eggs but they totally different care lol.
I am glad to hear that you got that door problem worked out. A bigger door isn't always better. :) I personally like the Jumbo Pharaoh the best. Good luck in the drawing.
I don’t think hitting an animal in the head is more humane. That’s just a trick they like to play with their minds. Don’t you think it hurts them to get hit in the head too? Seems to me that would be abuse to hit them in the head. Just cut off their heads and they are not aware of it at all. I would use the excess parts to make broth.
same method as dove - or any small bird I guess. We're looking to start with chicken or quail (leaning toward quail) so this is appreciated information. I'm thinking of keeping the legs and grinding them into the food for our dogs.
Use the breast as you desire, but package the legs, and freeze until you get a good amount. Use the legs to make quail broth, like you would do with chicken. Yes, I want in on the 100 free eggs. Blessing Chris.
I am just starting my quail-keeping journey so this would be fantastic! I just got my incubator, and the supples for my brooder/grow out cages. It’s been a struggle for me to leave my job to raise our kids. So I’ve been looking for a hobby, and what better thing than raising quail and providing a good source for my family!
Great videos Chris. I started Quail because of you. We are processing today, and having them for our Thanksgiving dinner. Home grown, home fed, home cared for animals.
@@Slightlyrednecked We processed 9 quail. We used the method from your older quail processing video. The one when you were in your kitchen. That method worked well for us. The quail were delicious, it was our first time cooking and eating them. They taste very good even better than expected. Processing quail is very easy compared to rabbits or chickens. But quail are a LOT of work to raise; too much feed, too much poo, and too much cleanup work of the brooder boxes. I am amazed at how much poo they make for their size!? UGH! I sorted out the males today, I have 21 males and 12 females left. So I saved the biggest healthiest 3 males, and the 12 females. I then put all the other males in another cage and will process this week sometime. All of them are about 12 weeks old now. Luckily it is winter now and we have very little light in the north here, so the males have just now started fighting. (To all of you who shame us who eat them, if we don't kill them, they will kill each other, they are absolutely ruthless to each other.) Happy Quailing.
Of of the best things about your videos is watching Max!! Sometimes I watch the videos a second, or third time just to see what Max is doing. 😂 Keep up the great videos! And a thank you to Hatch Poultry Farms for this great opportunity and the discount!!
Chris, I think the legs are one of the most tasty bits of the quail. Roast a tray of them tossed in olive oil salt and pepper (makes a super nice lunch) I love barbecued quail. Try coating them in yellow mustard & mix in 1 teaspoon of- Corriander seeds Cumin seeds Fennels seeds Caraway seeds 10 whole peppercorns 1 teaspoon of sea salt 1 teaspoon paprika 1/4 teaspoon of cayenne pepper All ground up and sprinkled over the mustard coated quail. Thanks for the suggestion. That sounds good. I do like them too. I generally just season them heavily with Greek seasoning and then grill them off. But there isn't much too them so it isn't a huge waste if you don't keep them.
I have just started with quail. Bought six, hatched seven and would love 100 eggs to add to my bloodline. Love your videos, have learned a lot from your videos. Keep up the great work.
Wow Chris! 100 eggs!! That is awesome! Thank you so much for all of your help. Your information is like GOLD to me! I was thinking about quail for a while now. We have 4 rabbit hutches that we can convert to quail hutches...so it is very tempting! And your dog is so handsome and well behaved!💙🐶
Thank yoi so much for thia video showing how to stun the bird first. In England uk 🇬🇧 by law we have to stun the birds first but no one shows us how to do it. Ive contacted the human slaughter association and even they didnt know in regards to quail.
I just started raising ducks on an urban setting but I may try quails too, as it seems easier to take care. Thank you Chris for sharing your knowledge with us!
I'm going to start raising quail. I got the inspiration from watching your videos. I'm not set up yet. Will be ready by April. I just bought my home on 2 acres. Alot to do. I would love to win the 100 eggs give away. Again, I love your videos. Ken from northern Maine.
by far chris you are the only one thats have this process right even when i worked in a seadfood steak house we alway nutralized it before boiling or grilling it but just to put a pair of scissors around it neck is not humane and i think your club method is right this is what i do well what was taught to me by my father he told me every living creature that you kill you will pray to the father for that blood if not you are held accountable for it this is the reason when i dispatch my birds it only me the bird and the most high that knows it
I just built some quail cages have been watching quail videos we are starting a homestead on 7 acres and I am going to start raising quail, I could sure use those 100 eggs
Wow, that sure looks much easier than what I have been doing. Thank you so much for all the great information you share with us. I will be sure to check out Hatch Poultry.
Awesome! That is so quick. The Egg give away is awesome. My son and I love watching your videos. He is 14 and has 15 cortunix and is looking to add to his flock. He is starting a suburban homestead and wants to live off grid someday. Goals! Thanks again!
Hi Chris, I found you through Living Traditions Homestead. Kevin recommended your Quail you tubes. I since have gotten 10 Quail and want more. I have learned a lot from you and my next goal is to start incubating eggs. So those 100 eggs would come in very handy. Again, thank you for sharing your knowledge.
As always well worth watching and learning...I got into rabbits over a year ago after watching your videos...been trying to get into quail for awhile but money has been rough lately with my heart condition and the 100 eggs would definitely be a God send now...but will keep watching the videos either way.
I just started quail and you have been so infomative. I would love to try hatching quail! I'm watching becuase I will be processing my first birds today.
Do you have a recommendation for a surprise litter of kits in a hutch I am scared to move the nesting box and I don’t want them to fall down the ramp they are also 12 days old
I would love to win 100 quail eggs from Hatch Poultry Farms. That being said for the entry, I love your channel and have learned a lot about quail from you. My most favorite video that I have seen you do is the one where you read scripture and explain it. Chris, thank you for all you do. Also, still sending up prayers for your wife's health. God bless you, Nita
Greek seasoning lol I personally could not eat my quail but for cutting out the kill try lemon juice and olive oil and oregano I do this for chicken Breast this your basic Greek marinade left in fridge over night minimum Barbecue as I have grown up in Greek tradition still interested to know your quail breast kebab let me know what you think like chicken does quail need Salt while cooking on barbecue??????? Your quail care videos are what lies closest to my heart so again thank you for the cut xx Kindest regards nick uk
Thanks for the info. I would love some eggs to hatch out some other quail varieties. Raising Jumbo Coturnix now and loving the eggs. I am looking forward to the meat once my next batch of grow outs hatch and start laying. 48 eggs in the incubator at day 8 right now.
I never breast a bird i always think it's non respectful to kill the bird for it's breast only (sry if this seems harsh but that's my personal thought ) to me I eat the neck, the wings (crispy) and the whole thighs except for the knee, it might look weird but when cooked enough i can eat those parts and really enjoy it eating them that way.
Don't worry, I don't take your comment as harsh. I don't blame you for eating everything. I don't like to waste things either but I really don't feel like it is much waste to throw out the rest. I did end up saving the legs and they turned out pretty good. Good luck in the drawing.
Thank you for the contest giveaway, and your link for 15% off isn't working. It was your channel that gave me the confidence to buy our first homestead animals....3 rabbits. Winning this giveaway would be perfect timing for us. My husband and I were blessed to move onto acreage in TX, this past August. Right away we started with 10 chicks that are now 13 weeks, 1 buck and 2 doe rabbits, and got a hutch for raising future quail. We'd love to try TX A&M birds.
What a awesome way to start off 2020 with some quail. Thanks so much for the giveaway. Also thanks for sharing this video, you make it look so easy and simple cleaning those quails.
We have been watching your videos on quail and been wanting to start. Would love to win these eggs so we could get started. Thanks to you and Hatch Poultry Farms for offering this giveaway.
I would absolutely love to start out with 100 eggs! I have been watching you for a couple years now and have already started gathering the materials to start raising quail based on what you have presented in your videos. I also have been watching your rabbit videos as well and will be considering raising rabbits after I get established with quail. I already have a flock of chickens and enjoy watching them every day! Keep the great videos coming!
If you get enough of the legs stored you could probably use them for a stock of some sort. Or if you process a ton of quail at once. I was curious though do you ever have to be concerned about the health of the bird? How do you know it is safe to eat and didnt have some sort of parasite etc? I love your videos and got the courage to raise quails from watching you thank you so much!
As long as the bird didn't show any signs of illness (lethargic, not eating, etc.) I assume it is safe to eat. As far as parasites, as long as you cook the meat well, they aren't a concern either. If I were to see any in the meat I would probably throw it out though. Good luck in the drawing.
The Gatorade cones sound pretty ingenious for someone with a high processing rate. I'm hoping to get quail but will be pretty small scale for a while.
That’s sounds very efficient, do you have anywhere we could see this? Facebook or Instagram?
@@myacrylicjourney624 , No I didnt put anything on because figured someone would complain about blood .
For people who dont know what to use the leg and back for, you can make a really good game stock. Keep all you leg and back, try to have atleast 2 pound. You make it look so easy. The question is, can I do it when the time comes?
It isn't difficult to do really. At least not physically difficult. But it also isn't fun to do and takes a little bit of mental preparation and the right mind set.

Oops. it is corrected now. Sorry about that.
By the way, you are entered into the drawing.
I make my own stock so for time, I can see skinning, but spatchcock them after skinning and keep the carcass for stock. The feet too
Nothing wrong with that.
I will be processing our first test bath of quail here soon so this video was super helpful. It looks much easier and faster than processing chicken.
I am glad you found it helpful. Good luck in the drawing.
Doing it that way is easy to wrap the breasts in bacon. Then take the legs and use them in soup!
Thanks that showed me one thing I wanted to know. Some good quality scissors are very important to have while processing them
That is true indeed. Thanks for watching. And good luck in the drawing.
Why can't I just chop the quail head off with the scissors quick and easy so I don't need to knock them out?
just pull off the head & get to it, his way satisfies the bleeding heart liberals into thinking it's proper. The kill should be quick & done!

Thank You Chris and Dawson! I'm glad this video came out today. I got about 60 birds to process.
Nice. I am glad that you found this video helpful. Good luck in the drawing.
Keep the legs for "wing night" ? Haha. Getting quail soon myself, thanks for the videos!
Thank yoi so much for thia video showing how to stun the bird first. In England uk 🇬🇧 by law we have to stun the birds first but no one shows us how to do it. Ive contacted the human slaughter association and even they didnt know in regards to quail.
Just got my quail 2 weeks ago, can't wait till they start laying
I'm fairly new, but make sure they have light. I have mine o. timer of 4-9 am, then 3-9 pm.
@@garyb4929 have it all set up ... They're still young BUT should be starting any time now 🤗
@@christabartow good luck,
Congratulations on the new birds. And good luck in the drawing.
I listen to all of the videos you produce on my way to and from work. Thanks for all the videos you produce. Great info
Thank you so much.
Wow! What a great efficient way to process quail. Thanks for sharing.
Thank you for watching. I am glad you liked it. Good luck int he drawing.
I just started raising ducks on an urban setting but I may try quails too, as it seems easier to take care. Thank you Chris for sharing your knowledge with us!
Thank you so much for watching my videos. Good luck in the drawing.
I'm going to start raising quail. I got the inspiration from watching your videos. I'm not set up yet. Will be ready by April. I just bought my home on 2 acres. Alot to do. I would love to win the 100 eggs give away. Again, I love your videos. Ken from northern Maine.
Thank you so much for the kind comments. Good luck int he drawing.
by far chris you are the only one thats have this process right even when i worked in a seadfood steak house we alway nutralized it before boiling or grilling it but just to put a pair of scissors around it neck is not humane and i think your club method is right this is what i do well what was taught to me by my father he told me every living creature that you kill you will pray to the father for that blood if not you are held accountable for it this is the reason when i dispatch my birds it only me the bird and the most high that knows it
I just built some quail cages have been watching quail videos we are starting a homestead on 7 acres and I am going to start raising quail, I could sure use those 100 eggs
Wow, that sure looks much easier than what I have been doing. Thank you so much for all the great information you share with us. I will be sure to check out Hatch Poultry.
Thanks for watching. I am glad you liked it. Good luck in the drawing.
Good morning, The tracking link ID is missing from the Hatch Poultry Farm URL link. I can’t go onto the website
Oops. it is corrected now. Sorry about that.
And good luck in the drawing.
Thank you , I need time to go true this step
Awesome! That is so quick. The Egg give away is awesome. My son and I love watching your videos. He is 14 and has 15 cortunix and is looking to add to his flock. He is starting a suburban homestead and wants to live off grid someday. Goals! Thanks again!
Awesome. I am so glad you find my videos helpful. Good luck in the drawing.
I would love you add some new bloodlines to my quail. When I first started looking into doing quail, you are the one I learned most everything from.
Thank you for watching. I am so glad my videos have been helpful for you. good luck in the drawing.
Great video for a refresher. Going to harvest a batch this week. And eggs would be the start of a new generation and bloodline
Thanks. I am glad you liked it. Good luck in the drawing.
Thanks for the video, great way to process. I prefer to butcher at a table so I don't hurt my back sitting on the ground.
I know what you mean. If I am doing a lot of birds, I have to take a break every once in a while and stretch. Good luck in the drawing.
Thank you. Doing my first one today. Hope it goes half as easy as you make it look! 👍
Just did my first today... was super easy!
Hi Chris,
I found you through Living Traditions Homestead. Kevin recommended your Quail you tubes. I since have gotten 10 Quail and want more. I have learned a lot from you and my next goal is to start incubating eggs. So those 100 eggs would come in very handy. Again, thank you for sharing your knowledge.
Thanks for checking out my channel. I watch Living Traditions as well. They are great people. Good luck in the drawing.
not sure if this is over but we are starting our homestead and quail would be great to add.
Unfortunately this drawing is over. You can still use the link in the description though and get a discount on ordering eggs.
As always well worth watching and learning...I got into rabbits over a year ago after watching your videos...been trying to get into quail for awhile but money has been rough lately with my heart condition and the 100 eggs would definitely be a God send now...but will keep watching the videos either way.
I wish I could just send out free eggs to everyone. Good luck in the contest. And hang in there, things will get better.
I just started quail and you have been so infomative. I would love to try hatching quail! I'm watching becuase I will be processing my first birds today.
I am so glad to hear that my videos have been helpful. I hope the processing went well and good luck in the drawing.
Do you have a recommendation for a surprise litter of kits in a hutch I am scared to move the nesting box and I don’t want them to fall down the ramp they are also 12 days old
Don't be scared. You can move them to a more secure place. The mother should still take care of them no problem.
Max lickin' his chops, he knows what is good. LOL Thank you for sharin'. :)
Lol. he would love to get some of the quail for sure. Good luck in the drawing.
God bless you,
Nita
Thank you so much for the kind words. And for the prayers. She is doing very well so the prayers are working. Good luck in the drawing.
thank you for your videos. When i was first considering quail i started watching your videos.
Thank you so much for watching. Maybe you will win some quail eggs and get into quail after all. :)
This is great! Thank you so much 👍. I have about 40 I need to process ASAP so this is a huge help.
Nice. Thank you for watching. I am glad you found it helpful. And good luck in the drawing.
So i did this for the first time with quail recently. The meat is kinda chewy and steak like. Is that normal or did i overcook them?
Greek seasoning lol I personally could not eat my quail but for cutting out the kill try lemon juice and olive oil and oregano I do this for chicken Breast this your basic Greek marinade left in fridge over night minimum
Barbecue as I have grown up in Greek tradition still interested to know your quail breast kebab let me know what you think like chicken does quail need Salt while cooking on barbecue??????? Your quail care videos are what lies closest to my heart so again thank you for the cut xx
Kindest regards nick uk
Thanks for the info. I would love some eggs to hatch out some other quail varieties. Raising Jumbo Coturnix now and loving the eggs. I am looking forward to the meat once my next batch of grow outs hatch and start laying. 48 eggs in the incubator at day 8 right now.
good luck with your hatch. And good luck in the drawing.
OK, I just tried this. I won't be going back to the traditional way!!!
Glad it worked well for you. Thanks for watching.
I never breast a bird i always think it's non respectful to kill the bird for it's breast only (sry if this seems harsh but that's my personal thought ) to me I eat the neck, the wings (crispy) and the whole thighs except for the knee, it might look weird but when cooked enough i can eat those parts and really enjoy it eating them that way.
understandably
Don't worry, I don't take your comment as harsh. I don't blame you for eating everything. I don't like to waste things either but I really don't feel like it is much waste to throw out the rest. I did end up saving the legs and they turned out pretty good. Good luck in the drawing.
Dude I really appreciate the video, all your videos are really helpful
Great video on processing quail. Can hardly wait to start raising and processing my own. Gotta love that giveaway!
Thank you so much.
Oops. it is corrected now. Sorry about that.
Oh, and good luck in the contest.
I have an incubator ordered from your video, and preparing to hatch my first batch. This would be a great start for me. I currently raise rabbits
I am sorry but this giveaway is already over. You can still take advantage of the discount code though and order some eggs in.
What a awesome way to start off 2020 with some quail. Thanks so much for the giveaway. Also thanks for sharing this video, you make it look so easy and simple cleaning those quails.
Thank you for the kind comments. Good luck in the drawing.
The legs are actually really tasty!
Wow this guy just wasted 100 quail legs, 50 heart, 50 gizzards and livers, and more!
No reason you can't save them. I don't find that there is much meat on the legs so it doesn't break my heart to "waste them".
@@Slightlyrednecked dog food.
Blessings everyone everywhere
A new blood line would be great! Thanks for having this contest!
Thanks for watching. Good luck in the drawing
We have been watching your videos on quail and been wanting to start. Would love to win these eggs so we could get started. Thanks to you and Hatch Poultry Farms for offering this giveaway.
Thank you for watching. Good luck in the drawing.
why is bopping the head better than just chopping the head off? What if you dont bop hard enough?
Agree, just cut the head off. Bashing not necessary.
This is so much better than other butchering methods
I would absolutely love to start out with 100 eggs! I have been watching you for a couple years now and have already started gathering the materials to start raising quail based on what you have presented in your videos. I also have been watching your rabbit videos as well and will be considering raising rabbits after I get established with quail. I already have a flock of chickens and enjoy watching them every day! Keep the great videos coming!
Thank you so much for watching my videos. I am glad you are finding them helpful. Good luck in the drawing.
Great video...its exactly what I needed...awesome job...thank you
Learning so much about quail and meat rabbits from your videos. Thanks for all the info! What an awesome giveaway.
Thank you for watching. Unfortunately, the contest is already closed. Hope to be able to do another one soon though.
We love watching your videos. Thanks for sharing your knowledge.
Thank you for the kind comments. Good luck in the drawing.
Can you save any of the bones to boil down for broth?
I don't see why not.
100 Quail eggs would be a great start to a new hobby.
You are entered. Good luck.
We have just started raising quail. We would love some more eggs!
Awesome. Good luck in the drawing.
Just hatched about 50 birds and most will probably go to the fryer. This is great.
Thanks. I am glad you liked it. Good luck int he drawing.
