- Mama Cho & I are cooking it up! This Korean Spicy Cucumber Salad recipe, aka Oi-muchim (오이무침), is my mom's recipe. Spicy Cucumber is super easy to make and a tasty side dish for your meals! 🥒
Her recipe differs slightly from mine, where she adds chives, less sugar, and no pepper paste. Elder Koreans mostly make their Spicy Cucumber like this because it is healthier.

4 Cucumbers
1 T Sea Salt
90g Chives
2 Scallions
1/2 Onion
1T Garlic
2T Pepper Flakes
1T Fish Sauce
1T Sesame Seeds
1 T Sugar
1 T Sesame Oil

Your mom is cute, and I like the variety show style of editing! I always make the thin cut version too, but maybe I'll try this version. I like that everything is made with the tablespoon measure, so I don't have to use a million spoons!

Chris, for this recipe how long can we kept in the fridge for?
My mom says the same thing, don't put gochujang mom's 😂. But I honestly like your recipe with the gochujang too. But without the gochujang gives nostalgia of my moms.
It was a great video. My mom must have grown up differently than your mom. She couldn't even make good rice. Her yaki mandu was pretty good though. She also made squids in a red sauce. I've tried to find a recipe for that but I don't know what it's called.
