So if you like steak, you'll love Cube Steak. It's a great cut of beef when you are on a budget. Cube Steak comes from the top sirloin or the top round, the rear leg of the cow. Cube Steaks starts out a little tougher, but it tenderizes immediately. Remember not too over cook it. So, sit back and relax as you enjoy this cooking show from start to finish! OH MY! This was so delicious. I made this tonight for dinner and both my husband and I agree that this is the only way we're cooking cubesteak from now on. I only left mine in the oven for 30 minutes because I was afraid the steaks might get tough and they turned out buttery and delicious. I haven't had a whole lot of success with liver and I'm wondering if I could substitue thin slices of liver for the cubesteak, follow all the same steps and seasonings, whether or not it would come out good. Liver is very high in the nutrients both my husband and I need in our diet and it's his favorite organ meat. Do you think this will work? If not, would you consider doing a video on the best way to cook delicious liver and onions? I LOVE your chanel, your recipes are GREAT, and you, yourself, are a delightful narrator. I can almost taste how good this is! My mother used Kitchen Bouquet in almost all her gravies & so do I. Most people have never even heard of it but there is just something wrong with light-colored gravy, except for creamed gravy.

I am 45 years old and I have always told people that I couldn’t cook cubed steak. Not even my mama’s recipe could help me; because she only cooks hers on top of the stove, which works perfectly for her but not for me. My life changed when I came across this video. Thanks Ms. Mattie!

@@mattieskitchen794 it turned out spectacular! I baked it on 325° for 45 minutes, and we had it with mashed potatoes made with milk, butter, and Duke's mayo 🥰, and spiced maple roasted butternut squash.
We also had it for leftovers last night.

Technically I only made Cube Steak once & it turned out decent at best. Definitely too tough. Although I'm seeing this & thinking this is precisely what I need. Have a feeling my Gorgeous Jamaican is gonna love this! Especially if I can get the Gravy right. Aww man I'm soo hungry now.

I have never been good with making gravy. Watching you make yours has clued me in. I’ve got to brown the vegetables and flour, make a paste almost and only then add water? Reading recipes isn’t half as helpful as watching. Thanks!

I've been cooking over 50-years. One thing to know about making gravy is to start out with your burner set to medium/medium high. You don't want to cook over high heat. I always caramelize my onions to a medium to dark brown in the grease/drippings before adding the flour. That adds more flavor.
The next important thing is to constantly stir the flour into the grease until it is well incorporated and jusssssstt starting to turn a light brown. This is called a roux (pronounced 'roo'). That is called 'cooking off' the flour. If you don't cook it off, your gravy will taste more like flour than the meat. When you add the water, be sure to use cold water and continue to stir constantly. If you add a cold roux to a cold liquid, it won't dissolve or thicken. Likewise, adding a hot roux to a hot liquid will result in a lumpy sauce. You want to either cool the roux down and then add it to simmering liquid, or add cold liquid to the hot roux you just made. I sometimes use homemade bone broth instead of water for added flavor. This is when I reduce the heat to a low simmer. You want your gravy to initially be a little thin because it will thicken as it cooks. Add water/broth gradually until you get the consistency you want. If you like, this would be a good time to add in some freshly chopped oregano and/or parsley.
I've never roasted my cube steaks in the oven, but I would cook them about half way in the skillet so they aren't over-cooked in the end. The juices from the meat will then seep out into the gravy while in the oven. I would also go much lighter on the salt. You can always add more to taste, but once it's in there, it's in there.
Mattie did a magnificent job in showing the step-by-step process. And I loved how she reminded you to taste as you go. As I said, you can always add more seasoning to taste, but once they are in there... they are in there.
Mattie, as I said, you did a magnificent job in your video presentation. I just felt compelled to add a few tips I learned over the years for the 'beginner' cooks out there. My intent is certainly not to offend!
For the rest of you, remember that recipes in cooking are guidelines (baking is another ball game and the recipe needs to be followed precisely!). Don't be afraid to make this dish, or any dish, your own! What do you like? Maybe add some mushrooms or celery when you are sautéing the onions. Try adding a little freshly grated parmesan cheese before popping it into the oven. Dress it up with some finely chopped parsley just before serving to add a bit of color. Serve it with rice, as Mattie did, or you can serve it with mashed potatoes or roasted potato wedges. Broccoli, cauliflower, roasted carrots, or even zucchini would go with this dish. Have fun and make it your own.

Put that leftover flour mix in a plastic gallon bag, label it and store it in a drawer. I do that for mixes and no waste to use for next time, it will not go bad, its just seasonings.
