  • This time, I made shiogama-yaki (salt-baked seabream). It is said that this dish originated with Toyotomi Hideyoshi when he wanted to gift freshly caught seabream to his mother, so he wrapped it in salt to keep the fish moist and flavorful. By wrapping the fish with salt, it steams the fish evenly and keeps it very juicy. This type of dish is often served at a ceremonial events in Japan. The cooking process is actually pretty simple, so if you get a chance, please give it a try!

    【Ingredients】
    1 lemon
    2-3 sticks of rosemary (or any herbs you like. I also used sage, thyme, basil)
    1 whole white fish (I used seabream with the scales still attached. If your fish is already de-scaled, use more kelp to cover the fish so the salt doesn’t directly touch it.)
    1 sheet of kelp
    1kg coarse salt (mine was $5 for 5kg/1$ for 1kg)
    3 egg whites
    1tbs flour

The cooking process is actually pretty simple, so if you get a chance, please give it a try! ご視聴、ありがとうございます。今回は鯛の塩釜焼きです。日本における塩釜焼きは、豊臣秀吉が九州の玄界灘で獲れた鯛を塩で包み、母に贈ったのが始まりと言われているそうです。九州に住んでいるのに、最近になって知りました。塩で包み、水分を外へ逃さず蒸し焼きにする事ができので、身がとてもジューシーに仕上がります。祝いの席などでしかあまり見かけませんが、調理は意外とシンプルです。塩も安い粗塩(1kgで100円弱)を使いましたが、とても美味しくできました。ウロコがない魚を使う場合は、昆布を多めに使い、塩に触れる部分を減らしてください (それでも、長時間放置すると塩辛くなるのではやり出来立てが1番美味しいです)。

      I only ever tried salt baking chiken, it turned out delicious. Going to try with local fish as well.
      I love how as soon as the fish appeared Poki went "yup, it's time to move closer to the food."
      As for the egg cracking, I always crack them on a smooth surface, on their side. Less broken pieces in the egg.
      Poki took that piece of fish with fingers instead of finger limes. 😅

    I'm always amazed how calmly the cats watch you cook. Even Poki lets you keep the fresh fish in front of him! Meanwhile my little guy won't even let me eat a sandwich in peace.

      They know they'll get to scent sample during the process and that they'll get a taste at the end (if appropriate). They know they're welcome to observe from those chairs. Having routines like this helps a lot. They know they don't need to press Jun to share the experience with them. I do the same with my cat. He used to be a lot more anxious and demanding but now that he knows I'll give him a taste at the end (again if appropriate for cats) he can chill 😺

    you can tell how trusting the cats are of Jun. He hammers the fish open in front of Poki and Poki doesn't even flinch despite it being pretty loud. My cat flinches if I sneeze near her XD

      The best part is, if you know how cats usually display affection, you can really tell how safe and cherished they feel from being included like that! Cats absolutely love to be a part of what their human is doing, so letting them watch so closely and allowing them to sniff/inspect everything is a great way to bond with them

    Who would have believed a few years ago Poki would become so well mannered?! He was literally dumpster diving in the house every chance he got. Now he stays calm on the stool while a freaking fresh fish is 50cm away…

    This is my cat’s fav channel. We hang out on the couch together and watch 2 or 3 in a row. She’ll get up every now and again to get really close and boop the screen, but mostly sits with me purring and watching

      I think he still does it since they still turn the trash and recycle bins to face each other at night (it was in one of their vlogs in the house) so he can't get into the recycle (still so amused by how he always went to the wrong one lol)

    Jun epitomizes what I think of the Japanese people...intelligent, humble, respectful of both people and nature, balancing all things in their lives, and who can deny the close bond he shares with his kitties. And we're all happy that they closely supervise their hooman to ensure that he brings us the very finest of culinary treats. This is one of my favorite dishes, and I will use your video as my tutorial when I prepare it myself for the first time. Although I'm not sure I can promise that my kitties will be as respectful as yours!

    Wow, that is so much dedication to get up at 3.30 am! I'm more likely to stay UP till that time of night LOL
    I have grown rosemary and basil in small pots on my back deck, and lemme tell ya, it is IMPRESSIVE how big Jun's plants are! That takes a LOT of trimming and care to keep them that neat and accessible for trimming. For basil alone, you have to trim off the tops every time it tries to flower, so that it doesn't get "distracted" from growing more leaves.
    I've never heard of Finger Limes before, but I love them! :D

    These videos always make me happy. I think this is one of the channels I've been following the longest, and I don't think that's changing any time soon. It's always a pleasure to see the wonderful kitties, beautiful nature, and delicious food. :)
