Little tip for the glaze: if you want it less sweet but still thick use a bit of cornstarch! It won't really affect the flavor but will adjust sweetness and consistency :-]

Team Glaze here; it makes the pancakes look fancy! Never thought to incorporate lemon and poppyseeds into a pancake batter, but it seems like a fantastic idea! Wouldn't you know, I have a burning desire to make these, but have no poppyseeds, so I shall have to venture out before a holiday weekend to get some. Grrrrrr! TFP : )
I always combine my oil and dry ingredients because I feel like it keeps gluten chains from forming for longer. Like tiny, waterproof force fields around the gluten molecules.
The Viet Vegan I use Australia’s Own Organic Soy Milk. It is sweetened with agave syrup and the protein content is 4.7g per 250ml. I added 2 tsp of apple cider vinegar to 1.5 cup of the soy milk.
Sometimes if mine aren’t cooked all the way through I just cover them in vegan butter & put them in the oven at 200* while I’m cooking the rest of them.
If you're going to zest a lemon, please use organic lemons or a lemon from someone you know who grows them personally! This isn't specifically a comment for the OP, but for everyone
