Music used in the soundtrack wouldn't count as anyone on the show saying "zombie", assuming you don't imagine the characters can hear the music we hear while watching the show. That said, I don't think the song is a good fit for the show purely because it's about a zombie, that's not how soundtracks are done, so I'd say the real reason they haven't used this song is one of these reasons: 1) they've never heard it or 2) it didn't seem to them that it would work well as the music for any particular scene or 3) they tried and couldn't get permission

Small joint with no ac, everybody sweating and Dr John dressed in Gris Gris outfit. So this is closest comparison to CW. Great Aussie jungle blues original artist.
