  • Inspired by Nigella's recipe from "Express" Maple Chicken 'n Ribs, i thought to make my own version for Spare ribs in the Weber kettle.
    The overnight marinade:
    - 250 ml of sharp Apple juice
    - 4 tbsp of Maple syrup
    - 2 tbps of Soy sauce
    - 2 tbps of sunflower oil
    - 1 cinnamon stick
    - 2 star anise
    - 6 cloves of garlic ( i peeled mine)
    - 1/2 red chilli pepper , finely diced
    - 1 piece of peeled ginger about 1 cm thick
Put this in a zip lock back in the fridge with the Spareribs to marinade overnight.
    Kettle setup:
    Fuel = Ecobrasa briquettes

    My own twist/stamp..... the glaze.
    - 240 ml Apple juice
    - 3 tbsp maple syrup
    - 3 tbsp soy sauce
    - 1 tbsp 5 spice
    - 1 tsp chilli flakes
    - 1/2 tsp of ground garlic
    - season to taste with salt
Bring to the boil in a sauce pan and reduce to less than 50%, until it sticks to the side of the pan.
Smoke the ribs for 2,5 hrs @ 120 degr C
wrap in foil for 1 hrs @ 120 degr C
finish 30 min unwrapped for the glaze (twice every 15 minutes)
    Enjoy!

This is good. I've been watching American BBQ guys but they always make enough for 20 people! Nice to see a normal sized recipe.
