Devils Pulled pork on the weber kettle with SnS

  • Making Devils Pulled Pork
    2 Kg of pork neck (procureur)
    Injection:
    100 ml Apple juice
    60 ml Apple cider vinegar
    40 ml Jack Daniels Tennessee Honey
    30 ml Worcestershire sauce
    1 tbsp salt
    1 tbsp granulated garlic
    Rub:
    1/2 cup smoked paprika
    1/3 cup dark brown sugar
    1/4 cup salt
    1/4 cup garlic powder
    2 tbsp black pepper
    2 tbsp chili powder
    2 tbsp onion powder
    2 tbps chipotle chili pepper
    1 tbsp cayenne pepper
    1 tbps cumin
    1 tbsp dry mustard
    Process:
    1) Cook on the kettle for 5 hours at 120 degr C or 250 degr F.
    2) Glaze the pork neck with favorite sauce, keep it on for another two hours
    3) Wrap in alu foil and cook till core temp 94 degr C or 204 degr F
    4) after it reaches the core temp, take it off, let it breathe for 2-4 minutes by opening the alu foil
    5) close the foil and let it rest for minimum 30 minutes before pulling

    Very nice. Came right apart with ease. Cooked perfectly. I like that injection. Never had that cut before. Also can use picnic roast which is other part of the shoulder. Has a bigger bone in it. However, most prefer Boston butt. Great cook 👍🏻🍺
