In these video tutorials, I normally use Bakels Premixes to save on time.
(Bakels is a bakery grade cake premix. Another great one is Allied Mills)

I use these butter based cakes above because they are sturdy under fondant and stable at room temperature, as are the muds.

And that's how it's done! Have a play around with the colours on this one, and maybe even incorporate some gold painted in the raised areas of the swipes ;) If you would like the macaron recipe, we have it right here:

The piping tip I used to stick the macaron on was a 6B and the boarder around each tier was created with a number 7 star tip, according to the number on the outside of the piping tip. However I think this might not correspond to Wilton tips. But search for a star tip where the points are heavily folded in.

You are like a Bob Ross with cakes, it's so relaxing to watch and the result is always beautiful!
I can't pick a favorite cake because they're all so terrific but this one is something special about it. I especially loved that middle-tier with the mixtures of color it just popped and gave your eyes somewhere to glue onto. If that makes any sense at all again a terrific cake keep on caking.

Hi Rosie, can I ask you use 1/2 butter and 1/2 shortening for the butter cream, does it taste funny ? i always use butter cream and I know it is not withstand the warm weather. I will making a cake on September and i live in Sydney. Would you think your butter cream withstand in the park all day ? since the party will be held in the park. Thanks in advance

Oh, I have a question, how do u work out how many serves per cake ? for example if I want to feed 20 people ? thanks in advance.
Hey lovely! Thanks so much for your comment :) there are a few charts out there on the internet that guide you as to how many serves per tier size. For a 20 feed, I would recommend going a 7 inch bottom and a 5 inch top tier. if you prefer the 3 tier look, but dont want too much left over cake, simply use a fake cake as the base tier, which would be a 9 inch ;)

I'm signed up for your cupcake and unicorn class in a few weeks and I was just wondering is the hybrid buttercream something you use in warmer climates vs. all buttercream?
Hi hun, is this Angelique? Thanks for joining! Yes, hybrid buttercream is much better for warm climates :) the frosting can be made a little firmer again but whipping the buttercream on medium to high speed for a few minutes longer with the paddle attachment.
