There are so many cheese we have in Canada. There is one called Armstrong you can get at Walmart and Buy Low foods. Amrstrong has variety of cheeses and also they have one category of Faith farms which are reasonable too and often at sale in Buy Low foods. There was one more I have seen at walmart but not able to recollect the name, that was one of the most soft cheese I had ever consumed. Hope this helps, Hare Krsna

I do not know the ingredients, it's not available here. Just remember there r three major ingredients which shouldn't be there in any cheese u want to buy : animal rennet, lipase and pepsin. Cheese should have only three to 4 ingredients that's microbial enzymes which is also present in yogurt , salt and milk solids

Milk ingredients are sattvik , more so the Cheese I used is completely vegetarian, Involves microbial enzymes same how yogurt has through fermentation. And I hope you know that yogurt is made with overnight rotting (fermenting) of milk with yogurt culture (multicellular organisms). fermentation is a tamasic process but because it's milk ingredient that's why we consider it sattvic and consume it on fasting days. We all need bacteria in our body and we all do have bacterias in our body who are requires for digestion plus evacuation.
Yes you may, it's not a grain. Some say green leafy veggies not allowed on ekadashis but that's just because of the level of strictness one follows. As per the definition of grains, pulses and legumes, spinach doesn't come under any such category.
How do u know its table salt ? In cheese making you have use pure cheese salt or kosher sea salt. Also The reason why regular salt is not used in ekadashi is becaus many prefer not much iodised things on this day as that can affect health. It's not a taboo!! But yes cheese making doesn't use regular table salt
Please use a non stick pan or pan which releases potatoes easily. Use oil or grease the pan properly. Remove moisture from the potatoes properly. The sogginess doesn't make potato stick to the base but high heat or less lubrication will. Keep lesss gap in between the potatoes like how its shown. Hope this helps
