I made your recipe and it was delicious. I also liked mixing the potatoes in the bowl with the cheese sauce ahead of time instead of layering the potatoes one by one and add the sauce and cheese in the baking dish and then repeating that process multiple times. This is much faster and just as yummy. I added the cayenne pepper and used both pepper jack and sharp cheddar cheese. I hope it freezes well because I made a full 9x13 dish and live by myself. Normally, I would take some to family or invite friends over but with Covid, I don't want to risk anyone's health. Thanks.
I'm making this tonight to go with a giant bone-in ham that I have slow cooked for about 7 hours with a brown sugar glaze some baked beans stir fry rice and some dinner rolls... Can't wait😋

I use that same cheese sauce over layers of spiral macaroni and grated cheese. Put it in the 9 x 13 pan, top with grated cheese and crumbs, bake in the oven for 45 minutes covered and 15 minutes uncovered. It’s delicious.
I am 70 and I have never seen the sauce added to the potatoes! I can’t wait to do this! Only difference is that we canned green poblano peppers and I am going to add maybe 1/2 cup of green chilies!

Hi! Hoping to be making this for thanksgiving this year! Couple questions: when you say “bring it to temperature” while making the cheese sauce.. do you keep the fire on at low at ALL time? Also, will this dish harden or become bad if I leave it out for a couple hours before eating? This is my first dish I’m bringing to the table and I want to bring a dish that won’t turn any type of way when being left out for a while! Hope to hear from you soon(:
Good morning Julia, good questions. When I say bring to temperature, I am shocking the temperature because adding in ingredients to the roux to make the cheese sauce. I do keep it on low to low medium heat the entire time. It does take a minute to come to temperature after adding the ingredients. You will see the consistency change as it all comes together. At room temperature, I do not see it hardening up. After you cook it, just cover in foil. The cheese sauce when cold as say in the fridge, will turn thick like a gravy would. The only portion that becomes a bit hard is the cheese on top. But that is while in the fridge. Cover with foil after you make it, you should be ok to have it ready for serving.
Made it, put two types of cheese I had leftover plus sprinkled a little parmesan on the top, twas heavenly. Thanks for showing me how to make a great ruoe also. 👍👍

This is a great recipe. Mine is in the oven now. I just used a 1/4 onion instead of garlic. This is a good Mac and cheese like you said.
