    Did you actually even read the studies? The rosemary actually increased the amount of carcinogens except for a single chemical called PhIP. The rest were all increased. Furthermore, these are rosemary extracts which are added, not pure rosemary. It stands to reason that addition of ethanol reduced the cooking temperature in the meat and that just adding rosemary wouldn’t do anything.
    I expect better from a doctor. Read the study before you give people advice.

    • @derski87
      @derski87 Місяць тому +1

      Cite your study? I just read two studies and neither show an increase in carcinogens using rosemary or ginger as a marinade. Only increases when using a marinade such as bbq sauce. In addition, there were decreases in more than 1 carcinogens.

      @ExternusArmy Місяць тому

      @@derski87 I read two studies, one he showed on screen and another from Saudia Arabia (if you Google rosemary charred meat Saudia Arabia, the PubMed article shows up). Here’s a quote from the Saudia Arabic study: “Surprisingly, rosemary extracts apparently enhanced the total amount of HCAs measured in beef Shawerma, whereas PhIP was the only mutagenic amine inhibited by rosemary with a reduction compared with control.”
      I removed the numbers in the quote so it’s not a huge wall of text, but this was in reference to using rosemary extracted with ethanol.
      His study shows that almost all the extracts failed to inhibit HCA (carcinogens) synthesis except for the very high concentration ones. They didn’t comment on if it increased the amount from what I remember, but if you visit the Results section, you could double check.
      I’m a biochemist so I do a lot of literature reading and have published research too. I could read some more studies like the ones you have found to find a better answer, but in the two studies I’ve read, it doesn’t seem very helpful or potentially worse. If you want to cite the studies you found or just give the keywords to find them, I can look into them with an unbiased view.

      @ExternusArmy no worries. I saw one study using kabobs - out of africa. Might have been the one you are referencing. The study you added to the video clearly states that rosemary extract was used with ethanol solvent percentages starting with 100% water and 10-20 and 30% ethenol. How does this study reflect anything about the rosemary plant itself? Ethanol or added water could have something to do with the results and is not a causation of the rosemary plant itself but rather a combination of rosemary extract, water, and ethanol solution.

    Yeah onions work great for the grill-it’s the acids in there. I drop em in a ziploc with vinegar (white or apple doesn’t matter) sometimes oranges.

    I believe garlic was in that same paper along with Rosemary. Essentially when they burn the outcome is less carsogenic than when meat burns. And they taste great too. And as he said, the amount is so small that whatever your diet it won't matter.
