- Follow along as I dowel and stack a 5 tier wedding cake for travel.
This is how I successfully stack ALL of my cakes for transport.
This cake was 5 tier 6", 8", 10", 12", 14" American buttercream covered cake.
The cake traveled 23 miles and 30 minutes in the car. It did weigh 70 lbs so you may need someone to help lift.
You talk about that if the cake was going far you would use a threaded rod. What is that?

I wanted to do Swiss meringue buttercream- any suggestions
This same stacking technique can be used on a cake with Swiss meringue - just be sure the cake/icing is good and cold when you go to stack to not smear/smush the icing.

amena Lajam so sorry I am just seeing this. Absolutely does not matter what type of cake as the straws are the support and keep everything from collapsing into itself. Each of these tiers were different flavours and types of cake.

Yes! Each cake is required to have a board to have something to sit on top of the supports
Have you ever hit the straws with your doweling and it cause bulging or cause leaning in the cake..especially during transport? Nervous about doing 2 dowels. I usually do 1 in the center. Any suggestion or clarification is appreciated. Thank you! Have a Blessed Day!

I have never had issue with hitting the straws, where the walls are so thin even if you hit one it would push out of the way slightly for the dowel. I use 2 for stability, there’s less “wiggle” when transporting and the cake is much more stable.

If assembled at the venue do you still need to put the dowels for a 4 tier cake 12, 10, 8, 6 ?
If assembled at the venue I do not typically add the centre dowels. For me, I use them simply for transformation structure

Thank u for your clear n amazing video...I always worry before transporting a wedding cake. Doweling in the middle is my problem. I think I will assemble at venue. My climate is hot n humid. But everyone prefers buttercream!
It is always a good thing if you are not sure.. to stack at the venue. especially in hot n humid conditions. :)

Hi, for a three tier cake what size dowel would you use?
For the dowels down through the top? I would still use the same size wooden dowels
Can dowels pierce through cardboard? What cardboard should I use?
JANEDEAR PASAL once you sharpen the dowels they will pierce through it, I use Wilton cardboard circles.
20 ish miles only 30 min. Where do you live? That many miles would've taken me an hr lol

Hello your video was a lot of help thank you. I had to do a double stack cake for 150 people, do I put a cake board in between the first 2 layer before I stack the other 2, or do I just add the bubble straw once each tier is together.

Is the cake frozen?
Instead of individually cutting each straw to length just place where you want and lift straws about 1/4 " and snip. Seems easier.
I don't know much about building cakes. But if I were cutting into that cake I wouldn't want all those straws in it
@@THEWIELDBOYS8700 You have to have the support for giant cakes. Cake layers are soft and the weight would crush the bottom tiers, and the cake would not be straight. It would be the leaning tower of Pisa 😅
You can certainly place and snip. Problem with that is, even though you think you’re cutting each one exactly that 1/4” down, they will all be off slightly. When dealing with a tiered cake you want to be as level as possible so taking the time to cut each one this way is one less worry about something being off by even so much as an 1/8” :)
@Ta ta .. supports are absolutely needed in any tiered cake, 2-3-4 doesn’t matter the number, without the supports as Shannin has mentioned the entire cake would collapse. Straws are easy and affordable, other options would be wooden dowels in each tier which are more work to cut and much more time consuming to deal with

I'm making a wedding cake next week for friends, and it is pretty much the same size, except 4 tiers (starting at 12'') instead of 5. This is the first video I've found with more than 3 tiers in the sizes I'm doing. Very Helpful!! Thanks!
Would you still recommend the centre dowel if it isn't being transported stacked? I'll be stacking day-of at the venue, but it will be sitting for a few hours after that - would a single centre dowel suffice for that?

This 5 tier feeds approx 200 people it’s a 6”-14” cake
Why do you stick the main middle dowel in after stacking as oppose to placing the dowel first and stacking the tiers through it
I use 2 dowels. That way the cake has more structural integrity
The reason I do it at the end it so I don’t have to try and line up 2 holes in each cake board and cake.
It’s not the same as 1 centre dowel/centre hole in a board

Can't the wooden dowel meet with the straws when slopping down?
It’s risky, but the chances are slim (get it.. cause the straws are slim :|) ... sorry bad joke!!
In all seriousness, the likely hood is minimal, and that aside, if they were to hit it, the straws will flex and move slightly to adjust for the dowel
I’ve always been afraid of the long dowel hitting one of my straws, so I normally just put a dowel down the center. Have you ever had that happen?
Nicole Ellis I have never had the issue. Honestly your chances are quite slim given the straws are so thin. And with that said because they are so thin and you are inserting a sharpened dowel you will likely strike it and it will move out if the way due to the force from the dowel.
Love it! Thanks!!! Why do you prefer to add middle supports at the end instead of threading tiers on them? I’ve never tried it this way, I really want to. Seems like perhaps it’s less hassle.

You kind of answered your own question :) it’s exactly that! It adds so much stability but it’s SOOOO much less hassle than threading the cakes onto a single centre dowel.
Wonderful tutorial. Quick question: at a class that I took, they said to purchase dowels specifically made for food; non-treated wooden dowels, because the long dowels purchased from home improvement places are usually chemically treated, and the chemicals could leech into the cake. I haven't had to make such a large cake, but where can long dowels be purchased? Everything I have found is online ordering only. Thanks a bunch!
Toni I have this same question!! Every sodden dowel (specifically for food) is too short for very tall cake.

These bubble-T straws seem to be the real deal for support of each individual cake so I bought a bunch, though I still like the non-treated wooden dowels that I purchased from Wilton. For the long dowels, none of the brick & mortar cake stores/supplies stores seem to carry them; they really keep the layers secure, but in general, I don't like to bring my cakes all assembled; I have too much concern of them tipping over from the car movement and weight and bumpy roads. What do you use? Thanks.

Can i use paper straw for support?
Cooking Steps I wouldn’t recommend it, paper straws go soggy and limp when they absorb moisture.

Marie Sabljak, I believe the cardboard discs have a small hole already cut out in the center for the dowel.

Hey ladies
In the video you’ll notice I talk about sharpening the wooden dowels to a point with an exacto knife.
One sharpened they will pierce through the cardboards with ease
Do you use cake boards or acrylic discs as the base of your cake? Is there a particular brand of cake board you recommend?
The cakes were decorated and chilled on acrylic disks that are larger than the cakes themselves, simply as a way of being able to move them around easily. However each cake is sitting on a cardboard circle the same size as the cake.
I just use regular Wilton white cardboard circles.

Not gonna lie, a guessing game, but as mentioned in other comments, I have never had issue with inserting dowels. The straw walls are so thing that the dowel will move it as needed if it comes in contact when inserting. I have been doing cakes this was for almost 10 years now without fail :)

Could I skip out on the wooden dowels, if your assembling them at the actual venue? I'm doing the same size cake as shown here. I will be stacking the 14 and 12 and the 10 and 8 separately to travel, and will put the already stacked 10 and 8 on top of the already stacked 14 and 12 and finish off with the 6 once at the venue! Not sure if this will work.

Bypass pruning shears work great for cutting dowels. I have a pair that I use ONLY for cake decorating.

Less things to bring with me and I would rather fix seams and buttercream issues while in my kitchen rather than on site. I prefer to get in and out of venues as quickly as possible
how to cut that cake
Like any tiered cake, it would have to be un-stacked to cut and serve.
Upon delivery I always let the venue know what type of internal structure is in the cake and how to remove it and how I recommend in-stacking and slices

Jany Velásquez glad this helped. Pricing is very subjective as there are a lot of things to consider. It’s important to sit down and figure out the cost of goods (yes right down to a tap of salt) then the cost of boards, dowels etc.
then you must consider the cost of electricity, gas for delivery. Wear and tear on your vehicle, time for shopping, delivery and cleaning.
And not to mention time for decorating.
But on top of all that you need to factor your wages as well as your businesses profit margin.
Honestly costs will vary pending location.
But if you sit down and consider all of the above you will easily be able to come up with a number that works AND that makes you money!

M B thank you. I always use American Buttercream (ABC) ... it’s more stable at room temp (I do substitute some of the butter with shortening to make it more stable.
200g butter 450g icing sugar plus milk works for me. I m in humid Mombasa.

But I have a question, can I use wooden dowel instead of the straw also after detaching the cake from the cake board was there a smaller board under the cake when place the cakes together?
Hi there,
Yes you can use wooden dowels if you wish, I find them to be more time consuming and way more work than the straws.
And yes there is a cardboard round under every cake.

How do you know where to cut it? Great job!! ❤️👍
You will occasionally hit one but no matter what type of supports you add you will potentially hit it.
However when you go to cut and serve the cake is unstacked. You will be able to see the straws then and avoid them as best as possible when cutting.

Would love love to know the same
When I deliver I always let the client/venue know what structure is inside, how they should remove it, how the cake should be un-stacked in order to slice.
I give them as much detail as possible and allow them to ask any questions needed.
That said I am always available for them to reach out with question or concern
