LEMON VELVET CAKE - A channel member suggested Shar's spin on a LEMON VELVET CAKE. It is a fabulous and fun cake to make and excellent for any occasion.
Perfect for this time of year! A must-try enjoy!
Preheat Oven 325’
Grease/Flour 2- 9 inch round cake pans
INGREDIENTS
LEMON CREAM CHEESE FROSTING
1 - 8 oz. cream cheese (room temp)
1 stick butter (room temp)
1 tsp vanilla extract
1 tsp lemon extract
1 tsp. lemon zest
1 tsp. fresh lemon juice
1 c. powder sugar (sifted)
OPTIONAL: 1 drop of yellow food coloring
MIX UNTIL CREAMY and PUT IN REFRIGERATOR.
LEMON CAKE BATTER
Dry Ingredients
2 ½ c. all-purpose flour (sifted)
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
Wet Ingredients
1 ¾ c. granulated sugar
¼ c. butter (room temp)
¾ c. vegetable oil
3 large eggs (room temp)
1 tsp. vanilla extract
1 Tbsp. lemon extract
1 Tbsp. lemon zest
1 Tbsp. white distilled vinegar
2 Tbsp. fresh lemon juice
1 c. buttermilk
