    If the reactions on Hot Ones has taught me anything, Da Bomb is the hottest sauce they have in their line up and most guests on the show barely flinch after any Last Dab Pepper X sauces. Usually they're just still suffering from Da Bomb and the Last Dab is a relief

      They claimed to have stabilized it 10 years ago and only just now got it tested; something doesn’t add up, and my guess is that they knew it wasn’t hot enough ten years ago but finally gave up when they couldn’t figure out how to reliably increase it.
      Alternatively, it could be unstable and they are lying about stabilizing it even 10 years later, so they tasted and gave one of the hotter peppers in the batch for testing but the average from the variance is actually much lower (causing the sauce made with it to be low, and also explaining why they won’t release the peppers if it becomes apparent that it is actually unstable and many of the blooms are just not that hot).

But I have all Abercrombie Peppers Dried pepper powders. I use them in basically everything.... So my tolerance is definitely higher than the average.... But this.... On my scale was about a 6-7 as your brother noted. I'm no Pepper fanatic but I enjoy a Nice Burn! This gave me a Burn.... But nothing like I expected, I put a dab on a piece of chicken for the 1st bite.... 2nd bite I dumped a good portion of Super hot Yellow pepper powder to add to the 2nd dab.... Slight endorphin rush, But only after adding the Pepper Powder....🤷🏾‍♂️

    Remember that peppers fluctuate/range in Scovilles. That inner membrane the seeds are attached to will come back 2.69m, but the flesh will only be 1.8-2m. Consider that with the dilution, then it's def not going to be as strong as something made primarily with extract (Da Bomb). I would rather have a hot, flavorful, wholesome sauce vs a jar of vinegar mixed with cap powder and extract.

    The math on the dilution is a simple as you think it is. However, maybe one of the dilutants could cause breakdown of capsaicinoids, or maybe something about the manufacturing process breaks down the capsaicinoids (i.e. excessive heating --> oxidation of capsaicin).

  • @Duke_of_Lorraine
    @Duke_of_Lorraine 9 місяців тому +1

    One problem with the Scoville Scale is how inconsistant it is, notably as it accounts for dry mass so it doesn't consider water. Pure capsaicin is 16 millions. Take a drop of pure capsaicin and put it in a swimming pool of chemically pure water, that water is now 16 millions as, if you remove the water, you still have pure capsaicin, despite the actual concentration of capsaicin being minuscule. Needless to say, you wouldn't even feel it.
    IMO the scale should be ignored, and replaced by a capsaicin concentration indicator.

    Scoville ratings are based on the DRIED form of the original pepper NOT the sauce in the bottle (don't ask me why). Evidently, to make the sauce, about 40% of the heat is lost in the cooking process. Then, since the final product is about 90% water, the scoville is one tenth of where it once was. From my understanding, unless extract or crystals are being added, the maximum SHU for any bottled hot sauce is less than 400K and more like 250K. This would explain why the sauce is nowhere near as hot as the pepper tested. Btw, salt exacerbates heat. If it's added, it's a good way to increase the perceived scoville. Hope this helps.

    Anyway, I tried the earlier version of the last dab with pepper x, I think it was called "the last dab xxx" and I had the same experience. It wasnt that bad tasting, just kind of earthy and not very sweet but the heat was nowhere near what I was expecting for whats essentially a mash of a pepper thats hotter than the (at the time) worlds hottest pepper. Had it on some random corn chips and had no problem to just continue eating them with the same decent sized "dab". Couldnt do that most of non-extract the reaper sauces I have tried.
    You can kind of see it on the show (which I like to watch) aswell, the guests either tap out with some of the nastier extract sauces in the middle or they dont tap out at all and continue with the last dab with not much issue despite putting that traditional extra dab on.

    I keep seeing everyone say that 91% of 2.69 mil SHU is 2.4mil shu...yes, that is correct, but the bottle says that 91% of what is inside is supposed to be the 2.69 mil SHU pepper in different forms (puree, distillate, and powder). Since the scoville scale, if I'm understanding correctly, measures how many parts water it would take to make 1 part of the product undetectable. So in PepperX case, it would take 2.69 million drops of water to make 1 drop of PepperX "juice" undetectable. if 91% of that little bottle is Pepper X "juice" in one form or another, the remaining 9% even if it was just water, wouldnt even lower the SHU of the sauce to 2.4 mil. it would take around 200K drops of water to lower it tahat far. 9% of that bottle is likely around 150-200 drops total (from experience mixing my own vape juice for a while and measuring everything in drops.) So this sauce isnt just shady, it's an outright lie, and false advertising.

      @@ChaseTheHeat My math was wrong. in my example above...it would take waaay more than 200K drops to lower the 91% of the bottle to 91% of what pepperX is supposed to be. the bottle is 5 fl oz. 91% of that is 4.55 Fl. oz so you would need 200K x 4.55 fl oz. of water to lower the SHU to 2.4 mil. so those last .45 oz of whatever else is in that bottle shouldnt even lower it to below 2.69...it would just lower the fifth decimal place...lol

    Honestly I am on my 4th bottle and I love the stuff. That being said it seems as if it could/should be hotter. CTH4 stings way more no two ways about it. As far as flavor I get a strong citrus hit right off, could be the vinegar you and Tommy both detected, then floral but in a nice way. But I also try to remember this sauce isn't just made for our kind it also had to be doable to the public at large. I'm sure if Ed wanted to mess us up he could and will. Have you heard about Pepper Y? He swears its hotter than X. I think our problem is we want to be hurt as bad as if we just ate the pod but we want in a sauce with a great flavor.

    Wow, I kind of don't know what to say... :-) For a comparison... Do you recall ever having tried the Last Dab XXX ? I'm kind of looking for a reference, do you think the last Dab triple X was hotter ? I have been waiting for you to get a hold of a bottle of this, I am on one hand... Kind of glad from one perspective that this sauce is consumable for the average Chile head, but also as you are conveying to us, it certainly did not seem to blow the doors off the building...🙂 it's going to be interesting.... To see how all this plays out, there's something to be learned, I'm sure you know this controversy, Ed is a fantastic person, and who knows what is in the lab of a mad scientist 🙂

      Ed owes an explanation. This sauce is a sham. $30 for a sauce that I doubt will be 300K SHU. I am looking forward to the results. This sauce needs an explanation from the people making money selling it. The 91% is where it becomes shady to me. This sauce should be 2 million SHU and it's weak.
      It's a bummer. I was expecting so much more

    Great video. I am wondering though if it would have been hotter if you got to the bottom of the bottle. Perhaps its all settled and yes it was shaken but maybe there isn't enough room in the bottle to properly mix it up. So you never know, you may be in for a surprise as you get further into the bottle.

    91 % pepper X would be about 4.5 Oz per bottle of just X, and .5 or half an ounce of vinegar. That would be so thick like a paste, especially with powder added. Edd Squirrely is so full of XXXX. If there is no XAnthan gum wait for it to separate and remove the thin vinegar, then taste it and it should all be pepper X.

    I am not a pepper "Xpert," but in my few experiences with hot peppers, raw peppers feel way hotter than hot sauces for me, like the difference is surprising (for equivalent scoville units, although I never tested what I eat in lab and I assume they are in the same range). Others with that feeling? This could be because some sauces are made with weaker peppers, but that would be false advertising in my opinion. This could also be a consequence of the average measure; without the standard variation (or other metrics such as skewness of the distribution if it is not gaussian), we have no clue how consistent the heat is for a given pepper.

  • @nicks.12
    @nicks.12 9 місяців тому

    Pepper x is roughly rated at 2.6 mil. Assuming it works this way, 90% of 2.6 is roughly 2.3. I think its safe to say its not anywhere near that hot. Id be surprised if its above 1 million.

    I have a feeling that if you take any of these super hot peppers, Primotallii included, and make it into a sauce like that with additives that it won't be nearly as hot as the pepper itself.
    The 91% part may be referring to 91% of the entire bottle. You would probably need to consume 91% of the bottle at once to get a heat level close to the actual Pepper X pepper. That's my guess.

    I tired the last dab, all marketing, very little heat. Given the $20/bottle price tag, I expected a lot more. But I suspect there is limited supply of pepper x, and they want to sell as many bottles as possible. So there is a lot of other peppers or filler because heat level is very disappointing

    The scoville rating is 0,91 * 2,7M = 2,45M scoville.
    But you asked for a mathematician. I happen to be one... so let's make it more complicated... I mean let's generalize it and see why it works. You can also look at it this way: there is 91% material at 2,7M scoville and 9% material that's 0 scoville. The rating of the whole sauce is a weighted average over the components. The rating is thus 0,91 * 2,7M + 0,09 * 0 = 2,45M scoville. Here 0,91 and 0,09 are the weights. You just multiply the percentages by the scoville ratings and sum those, so this method can also be used if you mix substances of varying scoville amounts.
    By the way, the reason you need to take an average in the first place has to do with the fact that the scoville scale is a linear scale, which basically means that 2 times more scoville means it's also 2 times as hot. Not all scales work like that, for example the decibel scale for sound is a logarithmic scale, so you would need to do something different there. (A sound that's 2 times as loud corresponds to *adding* a fixed number of decibels instead of multiplying the decibel rating by 2.)
