shortbread protein cookies

  • This protein cookies is easy to make. Healthy and nutrition.
    Ingredients:
    1. 12 g whey protein powder (pea protein powder)
    2. 50 g ground almonds
    3. 45 g sunflower seed butter (or use any nut butter of your choice)
    4. 25 g honey or golden syrup
    5. 15 g self-raising flour
    6.15 g coconut oil
    7. 5 g oat flour
    8. 5-6 g coconut flour
    9. 2 g coconut sugar (or use sweetener)
    Method:
    1. Preheat oven to 180C (350F). Line cookie tray with non-stick baking paper.
    2. Blend all ingredients together using a hand electric mixer or food processor. Roll dough on floured working surface and cut out as many cookies as you can, reroll dough and cut out again (or shape them into balls and flatten with hand) and place on prepared baking tray.
    3. Bake for 8-10 minutes. Check after 8 minutes just to make sure and remove them from the oven as soon as they start to brown on top.
    4. Let them cool completely to allow them to set. Makes 8-10 cookies.
