Crispy Spinach - Fried Food

Ingredients:
1 cup rice flour
5 tbsp tapioca flour
1 cup cold water or coconut milk, reduce if using egg.
1/2 tsp salt
1 tsp coriander powder
1 tsp turmeric powder
1 tsp minced garlic
A pinch of pepper
About 20 or more spinach leaves, rinse and pat dry.
Oil for frying
In a bowl mix rice flour, tapioca flour, and seasonings. (Use seasoning follow your taste).
Pour 1/2 cup of water. Stir. At this step, we can add 1 egg and adjust the batter. Or skip the egg by adding more water or coconut milk.
Mix well until no more lumps. The batter slightly thick and still runny.
Dip spinach in the batter evenly. Fry over medium-high heat.
Fry until both sides crispy. I recommend using a large pot/wok.
Put in the paper towels or wire rack to release the excess oil.
Keep in an airtight jar/container to stay crispy.
Note:
The rests of cooking oil
To reuse:
Strain to remove any crumbs.
Keep in a clean and dry tightly sealed container/bottle, in a cool and dark place.
Still can be used for cooking/stir-frying.
To dispose of oil:
Don't pour it down the drain, will clog drain pipe.
Place the oil in a sealable bag and discard with your
regular trash.

Chok Hwa Chern, if they keep in a sealed airtight container then can stay crisp for a month, if it doesn't finish already :D We can use the batter to fry other vegetables including cauliflower, the crispiness depends on the thickness of the vegetable. have a blessed weekend too :)

You may skip it and use rice flour mix with plain flour
