    Does it need to be refrigerated? After filling jar?

      If you do everything right and sterilize your jars and lids, then pour the jam while it's hot and seal the jars, it can be stored outside the refrigerator in a dark, cool place for up to a year. The heat kills all the bacteria and yeast, the sugar preserves the jam and doesn't let it spoil.

    Is sugar necessary? How much sugar?

      Sugar is essential for preserving the jam and for the flavor. The ratio is 3:1 fruit to sugar by weight. For example, if you use 900 grams of pears, you will need 300 grams of sugar.
