For the pork butt, I would highly recommend trimming the fat cap if not already done so. This can aid in the seasoning penetrating the meat. There is plenty of intramuscular fat to keep it tender.
Looks so good - makes me want to go get a picnic basket! It all looked delicious. Loved your reaction to the gin fizz - I could have told you it was a bit heavy on the gin .. more like a gin fizz martini! Loved it. Also loved your wild wild west, index finger shoot 'em up exclamations.
