    Randy your joyful singing and cooking is like a balm for my soul, much needed today! I'm a little down as my garden here in western France is looking very brown and dry and all my veg are looking like your radish that ate itself 🥲 I've watched your videos for years and am always inspired to call some friends and invite them over for dinner!     Food really is a great connector. My family is Haitian and we make a polenta like dish called mayi moulen and it’s served with a beefy vegetable mixture, legume and it’s basically creamy polenta with a ragu. Don’t know how I missed that.

    Cream Of Tartar is used as a stabilizer when whipping egg whites.

    The whole approach behind this opening statement on the recipe is why I love your channel.

    At 16:35 to 16:40 if you look at the polenta, the pan landle on the right burner looks like a dragon shutting its mouth !!

    Randy these days on can easily buy a container of egg whites in any big supermarket. Why not use that instead of separating the eggs yourself?

    nothing worse than a loose bottom- be careful with that pan
