In Asian cooking they use dark soy for its color and also it's sweeter than regular soy, so it might be a good addition to vegetarian onion soup too. That's just a an idea that flashed by in my mind. Great menu!

Am intrigued by your details regarding stressed rescue dogs....is there reference material available? My son and family just got a rescue dog from the Dominican Republic and although she is lovely, there are issues of stress when they take her for a walk and there is a loud noise or random cat walking by. They have taken her to dog school but she is too timid/scared to participate. Thanks,
I think you were chanting "lemon" over the chard to the original tune of "Lost in Space". I made onion soup last week and stupidly used Reishi mushroom powder to enrich and it embittered the entire pot. Tried saving it with vinegar, but it was a loss. I'm running up that hill to make a deal with God? Not a Kate Bush fan. I AM a diehard Joni Mitchell fan. Strains of Benny Goodman coming through the pinewood trees.
